It is the winery's most important red wine. This grape variety is a<br />very special challenge for the winemaker, as it is very demanding in terms of soil and climate, and must also be processed with special care in the cellar. For the Pinot Noir<br />Sanct Valentin, which has been part of the prestige line since 1995, only grapes from the best vineyards and oldest vines are used. COMPOSITION RIPE<br />'The great wine from our very best grapes, harvested very late and vinified with great care'.<br /><br />GRAPE VARIETIES: Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Lagrein<br />SOIL TYPE: Alluvial soil of porphyry origin and moraine soil<br />GROWING FORM: pergola and wire frame<br />PLANT DENSITY: 6,000 - 10000 canes / ha<br />CROPPING AGE OF THE VINE STOCKS: 18 years<br />QUALITY IMPROVING MEASURES: Thinning of 60% of the grapes in July. Part of the Cabernet grapes is dried on the vine.<br />HARVEST: Staggered from the beginning of October to mid-November.<br />VINIFICATION: De-stemming and subsequent fermentation in stainless steel tanks at controlled fermentation temperature with a maceration period of about 10 days for<br />Cabernet and 7 days for Lagrein.<br />VINIFICATION: Biological acid reduction and ageing in new barriques of mainly French oak for 18 months.<br />COLOUR: Dense garnet red<br />Aroma: Ripe fruit, dried fruit, redcurrant, stewed fruit, vanilla.<br />TASTE: Versatile aromatic, rich in extract, velvety tannin.<br />

Bold yet delicate on the nose, it is redolent of ripe cherries, cassis and prunes; hints of milk chocolate, rhubarb<br />and balsamic mentholated tobacco also come through, creating an exquisitely refined, harmonious and elegant bouquet. Tonic and juicy on the palate, it is a ripe, full-bodied<br />wine with extremely lively tannins; an invigorating citrus note perfectly balances its high alcohol and helps make this big wine a most enjoyable drink.<br /><br /><br />Recommended food pairings<br /><br />Amarone is made from dried grapes and is therefore a concentrated, round and powerful wine, an elixir of long life. After a few years of bottle ageing, it becomes an excellent<br />complement for luxurious dishes such as jugged hare, roast turkey with truffles, braised beef in red wine, Amarone risotto. MECZAN PINOT NOIR<br /><br />The Meczan is a very varietal Pinot Noir, which is characterised above all by its softness, its distinctive fragrance and its clear fruity character.<br />It has a vivid ruby red colour with slight garnet reflections. Fresh, animating bouquet with seductive notes of wild berries and cherries.<br />On the palate, the Meczan presents itself very harmonious and distinctly juicy with intense fruit notes.<br /><br />Pinot Noir was first successfully cultivated in Trentino-South Tyrol at the beginning of the 19th century.<br />It soon became apparent that the gentle hills and the special microclimate of the high plateau in Mazon offered the ideal conditions for producing Pinot Noir of international<br />calibre.<br />Meczan<br />Hofstätter Classification<br /><br />Grape variety<br /><br />Pinot Noir<br />Soil<br /><br />Conglomerate of clay, limestone and porphyry soils.<br />Vinification<br /><br />75% of the grapes are destemmed, 25% enter the fermentation tank intact. The essence of the hills around the wine estate and the lake, full of vigour and warmth.<br /><br />Grape varieties<br />Lagrein 48 %, Merlot 35 %, Cabernet 17 %<br /><br />Location &amp; soil<br />The Manincor estate and the Panholzerhof, both sites are south-east facing overlooking the Lake of Kaltern at an altitude of 250 m above sea level; soils are rich<br />comprising sand and clay mixed with limestone gravel and other morainal deposits. These vineyards are among the warmest in all South Tyrol, pre-destined for the<br />production of great red wines.<br /><br />Expansion<br />Grapes from each parcel of vineyard were crushed separately and fermented in a mixture of oak and cement vats and stainless steel tanks using yeasts occurring naturally<br />in the vineyard. Skin contact lasted ten days and was rigorously controlled, during which time the cap of skins was pushed down into the fermenting liquid daily as it rose to<br />the surface in order to extract velvety, assertive but ripe tannins. Fresh fruit and elegance are the main qualities we strive for in this wine. The young wine was transferred<br />into oak barrels of varying sizes where it matured for twelve months.<br /><br />Description &amp; drinking recommendation<br />Concentrated bright ruby. A rich, seductive berry fruit and spice nose leads to a remarkably succulent, well-structured palate of white and black pepper, dark chocolate,<br />liquorice and damson with silky-textured tannins. Almost Burgundian in its drinkability.<br />Enjoy at optimum maturity from 2023 to the end of 2028.<br />Serve: just below room temperature, 60 - 64 °F<br />Delicious to accompany well-seasoned Mediterranean first courses, peppered lamb steaks and other dishes of fried or grilled red meat.<br /><br />Our claim<br />Biodynamic<br />Vegan<br />
