Chardonnay DOS Südtirol...

CHARDONNAY DOSS
PINOT SELECTION
Name: Doss refers to the hill around Kurtinig. The small winegrowing village was often under water and is therefore often called 'Little Venice'. The hill, formed by flooding, is
today the most important cultivation zone for Chardonnay & Pinot Grigio.
In contrast to the rest of the South Tyrolean lowlands, fruit growing is not practised due to the different soil structure, but vines are planted almost exclusively. Label: The
label shows one of the oldest vines in South Tyrol, which was traditionally planted on important occasions. This vine is 270 years old and is located right next to our
Chardonnay plant.

Aperitif, goes well with light hors d'oeuvres and with finely spiced dishes Straw-yellow colour with greenish reflections, long-lasting apple and banana aromas, complex
structure, juicy, persistent.
Pleasant fullness, well-integrated acid structure, harmonious-fresh elegance.
Auratus Gewürztraminer...

AURATUS Gewürztraminer
South Tyrolean Gewürztraminer Auratus DOC
Growing region: Our Gewürztraminer AURATUS grows in its place of origin, Tramin, on the South Tyrolean Wine Road. In an exposed sunny position in the fraction Rungg
near Tramin, we use the ideal conditions for the production of physiologically ripe Gewürztraminer grapes. The vines grow at an altitude of 320 - 400 metres above sea level
in clayey loam soil.
Vinification: The fully ripe and selected grapes are subjected to a cold maceration of about seven hours before pressing. The temperature-controlled fermentation at 20°C and
the maturation on the fine yeast give this Gewürztraminer its special note.
Harvest and yield: When the grapes have reached the ideal physiological ripeness, they are selected at the end of September to mid-October and harvested by hand so that
only selected grapes are used for the further processing of this Gewürztraminer. With a vine density of 7,000 vines, a yield of 45 hectolitres of wine per hectare is obtained.
Recommended with: The Gewürztraminer AURATUS is suitable as an aperitif and goes very well with spicy dishes, liver pâtés, Asian cuisine, sophisticated fish dishes,
crabs and lobster.
Content: 0,75 l
Chardonnay Riserva DOC 2019...

Chardonnay Riserva DOC 2019...

Complex Chardonnays from high altitudes are a rarity, but that is precisely where the appeal lies for us. Troy means 'path' in the language of our ancestors. The name
illustrates our long journey of research and experimentation with this noble grape variety.

The winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused premature and rather uneven budding in the well-supplied soils. A
cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a lot of careful
manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative effects. A
significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the harvest. The
harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are characterised by
particular elegance. The red wines present a lot of fruit and a lively tannin structure.

Grape variety: Chardonnay
Yield: 38 hl/hectare
Altitude: 500 - 550 m
Soil: calcareous gravel and clay soil
Age of vines: around 25 years, stocking on Guyot and simple, open pergola
Exposure: south-east
Climate: extreme interplay between sunny days influenced by the Mediterranean climate and night hours influenced by cold downdrafts from the surrounding mountains
Harvest: Beginning of October
Alcohol: 14,0 % vol
Total acidity: 6.1 g/l
Residual sugar: <2 g/l
However, a warm and sunny start to the summer made up for this.
August and July were very varied, so the grape harvest started relatively late on 9 September. The rainy September was a great organisational challenge for our winegrowers,
but in the end the harvest was completed on 26 October with a very good result.
VINIFICATION: partial cold maceration for one night; partly spontaneous fermentation with tempe
temperatures between 19-21°C; ageing for 6 months on the fine lees in steel tanks and 25% in tonneau and barrique; filtration and bottling in May.
VINEYARDS: biodynamically and organically cultivated vineyards in various locations in Kaltern.
DEGUSTATION NOTES: bright straw yellow with golden reflections, fruity aromas reminiscent of yellow fruits and light salty notes underlined by the Sauvignon component
of the cuvée, harmonious balance between fruity notes and refreshing acidity structure.
RECOMMENDATION: the complexity of this four-vineyard cuvée allows it to be used in a wide variety of ways, making it an excellent accompaniment to fish hors d'oeuvres
but also to aromatic creations.
CERTIFICATION: IT BI0 013
