The grapes used to produce this finely aromatic Asti spumante come from Moscato bianco vineyards on soil rich in limestone. The continuous 'perlage' and persistent foam<br />are a prelude to the ample and intense perfume reminiscent of orange blossom and sage. The sweet and inviting flavour is tempered by a stimulating acidity. Ideal with<br />dessert, the wine of the party, as an aperitif and for any other occasion to remember.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west, with rows oriented to take full advantage of the sun's action on leaves and bunches.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: nr. 4000/5000 vines per hectare from 5 to 40 years.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun's action and encourage photosynthesis on<br />the leaves. Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit. Vintage Collection Extra Brut 2018<br />Denomination: Franciacorta Millesimato.<br />Grape varieties: Chardonnay 65%, Pinot Nero 29%, Pinot Bianco 6%.<br />Original vineyards: 17 Chardonnay vines, with an average age of 28 years, located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and<br />Passirano. 7 Pinot Nero vines, with an average age of 29 years, located in the municipalities of Erbusco and Passirano. 2 Pinot Bianco vines, with an average age of 29<br />years, located in the municipality of Passirano.<br />Harvest: 2018. Very cold winter: February with snow and minimum temperatures as low as -7°C. With the onset of spring, the weather remained cold and damp and the<br />vines began budding about ten days later than usual. From mid-April, an abnormal rise in temperatures to 29°C favoured abundant flower fertilisation. With the arrival of May,<br />however, the rain returned. It was only from 15 July that the real summer was seen, which continued until 25 August with temperatures up to above average, with almost<br />torrid heat in August. The much-desired summer rain arrived in the third ten days of August and met the water requirements of the vines. The harvest that began on 13<br />August gave us a vintage characterised by a very generous nature, well managed by thinning, with beautiful, healthy and perfectly ripened grapes.<br />Average yield per hectare: 8,300 kilograms of grapes, equivalent to 3,570 litres of wine (wine yield: 43%).<br />Vinification: Franciacorta Vintage Collection wines are the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. The<br />grapes, freshly hand-picked into small crates, are graded and cooled. Each bunch of grapes is selected by expert eyes and hands, to then benefit from exclusive 'grape<br />spas'. A special system washes and whirlpools the bunches, using three soaking tubs and a drying tunnel. After crushing in the absence of oxygen, all the musts of the<br />base wines ferment in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the barrel elevage lasts only 5<br />months. A pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. The dégorgement takes place in the<br />absence of oxygen, using a unique system invented and patented by Ca' del Bosco. Satèn is the most delicate and elegant Franciacorta. Produced only in the best vintages, it is made from 100% Chardonnay grapes harvested in the high hillside vineyards.<br />The selection of the grapes is meticulous, to say the least, as is the slow maturation in small white oak barrels. Once assembled, the cu-vée is aged in the cellar for a<br />minimum of 4 years. The abundant mousse, the very fine perlage and the golden straw colour announce enchanting and suave aromas of pink flowers, ripe citrus fruits and<br />noisettes.
