PEAT: STRONG<br /><br />We didn't want to smother the fresh, muscular peat of this young single malt from Islay with too much wine, so we chose a finish of just one year in new Pedro Ximenez<br />casks. The first olfactory impression confirms that it is not at all vinous: the interaction with the casks has only accentuated certain qualities of the distillate, providing a<br />curiously contrasting juxtaposition of buttery notes with more acidic ones, reminiscent of balsamic vinegar. Apart from that, it is a very medicinal whisky: peaty in the tarry<br />sense, rather than ash-oriented. The richer ash and vegetable side of the smokiness only reveals itself on the palate: again slightly buttery, but overall rather herbaceous and<br />dry. The finish is a long, powerful crescendo of peat smoke, dry and taut.<br />

CAOL: STRONG<br /><br />A splendid Islay malt, round and rich, harvested at the lively age of 8 years, and with an particularly long finish of 20 months in hogshead first-fill bourbon that smoothed out<br />all the roughness, adding a creamy and velvety touch. It is sunny, joyful and warm: it is definitely characterised by peat smoke and an<br />ethereal freshness, but with the lemon and salt notes kept in the background. The smokiness is balanced by a slightly country note, by vanilla and banana, but the<br />prevailing impression is still very balsamic and resinous. The effect of the bourbon barrels is most evident on the palate, with a succulent and robust interaction between the<br />tar and malt sweetness, between the ash and a character more honeyed character. Aromatically intense and full-bodied, but gentle on the palate: for us this is the balance<br />perfect balance for a young but very mature.<br />

<br />Ardbeg Uigeadail<br /><br />Pronounced 'Oog-a-dal', it's a special vatting that marries Ardbeg's traditional deep, smoky notes with luscious, raisiny tones of old ex-Sherry casks. Ardbeg Uigeadail was<br />voted by the 120,000+ strong Ardbeg Committee as their favourite Ardbeg.<br /><br />Non chill-filtered at 54.2% ABV.<br /><br />Color: Deepest Gold.<br />Aroma: Rich and weighty with heady and smoky aromatics. At full strength, the initial aroma is a beguiling mix of warm Christmas cake, walnut oil and parma violets fused<br />with fresh ocean spice, cedar and pine needles falling from the Christmas tree. A smouldering coal fire and the scent of well-oiled leather brings warmth. The sweetness of<br />treacle toffees and chocolate-coated raisins emerge through the smoke. With water, the deep smokiness increases in intensity, reminiscent of a fired Christmas pudding.<br />Rich flowering currants and warm baked banana and walnut bread are served with simmering mocha espresso.<br /><br />Taste: Full flavoured and rich with a deep mouth-coating texture, the taste is an intriguing balance between sweet, spicy and deep smoky flavours. The flavour is initially<br />sweet. A burst of winter spices sets off a smoky-spicy explosion countered by a sumptuous mid-palate of honey glazed smoked food and chewy treacle. Waves of deep<br />smoky tones and rich aromas build up on the palate like a fine Montecristo cigar.<br />Finish: Amazingly long and chewy with lingering raisiny, deep mocha tones and rich aromatic smoke into the perfectly integrated finish.<br />
