PEAT: STRONG<br /><br />We didn't want to smother the fresh, muscular peat of this young single malt from Islay with too much wine, so we chose a finish of just one year in new Pedro Ximenez<br />casks. The first olfactory impression confirms that it is not at all vinous: the interaction with the casks has only accentuated certain qualities of the distillate, providing a<br />curiously contrasting juxtaposition of buttery notes with more acidic ones, reminiscent of balsamic vinegar. Apart from that, it is a very medicinal whisky: peaty in the tarry<br />sense, rather than ash-oriented. The richer ash and vegetable side of the smokiness only reveals itself on the palate: again slightly buttery, but overall rather herbaceous and<br />dry. The finish is a long, powerful crescendo of peat smoke, dry and taut.<br />

This special release was launched in 2019 as a Halloween<br />tribute in limited production. Only 5,000 bottles were produced worldwide, the result of selecting a very small proportion of the barrels that age in The Glenrothes'<br />warehouses.<br /><br />How to drink it: it can be enjoyed neat or with a large cube of ice, so the dilution will be very slow and the tampering always regular.<br /><br />Focus: Since the beginning of its existence, the Rothes distillery has been located next to the town's cemetery. Following in the footsteps of the batches that came before it, slight changes to cask<br />selection mean the notes in this whisky vary from the last. The new range is named 'Soleo' after the traditional<br />process of sun-drying the grapes that creates the basis of sherry making. The result is a single malt with hints of vanilla, lemon and butter bread.<br /><br />How I drink it: best enjoyed neat or on the rocks, it is also perfect for mixing cocktails. We recommend a version of the classic Bobby Burns: 50ml The Glenrothes 10 yo,<br />20ml white vermouth lustau, 1 barspoon yellow chartreuse. Prepare in a mixing glass filled with ice, serve in a chilled glass with lemon twist.<br />

Ardbeg Uigeadail was<br />voted by the 120,000+ strong Ardbeg Committee as their favourite Ardbeg.<br /><br />Non chill-filtered at 54.2% ABV.<br /><br />Color: Deepest Gold.<br />Aroma: Rich and weighty with heady and smoky aromatics. At full strength, the initial aroma is a beguiling mix of warm Christmas cake, walnut oil and parma violets fused<br />with fresh ocean spice, cedar and pine needles falling from the Christmas tree. A smouldering coal fire and the scent of well-oiled leather brings warmth. The sweetness of<br />treacle toffees and chocolate-coated raisins emerge through the smoke. With water, the deep smokiness increases in intensity, reminiscent of a fired Christmas pudding.<br />Rich flowering currants and warm baked banana and walnut bread are served with simmering mocha espresso.<br /><br />Taste: Full flavoured and rich with a deep mouth-coating texture, the taste is an intriguing balance between sweet, spicy and deep smoky flavours. The flavour is initially<br />sweet. A burst of winter spices sets off a smoky-spicy explosion countered by a sumptuous mid-palate of honey glazed smoked food and chewy treacle. Waves of deep<br />smoky tones and rich aromas build up on the palate like a fine Montecristo cigar.<br />Finish: Amazingly long and chewy with lingering raisiny, deep mocha tones and rich aromatic smoke into the perfectly integrated finish.<br />
