Appius 2012<br />The third edition of the super wine APPIUS remains true to the principle of interpreting the respective vintage in the best possible way through excellent grapes personally<br />selected by Hans Terzer. From a climatic point of view, 2012 was very positive in the Überetsch: the harvest was without significant rainfall and produced fully ripe grapes<br />with beautiful fruit and intense aromas, which can also be found in the APPIUS 2012.<br />The cuvee with a main part of Chardonnay is combined with Sauvignon, Pinot Grigio and Pinot Blanc. The result: a multi-layered complex nose of paradisiacal fruit notes<br />such as: Banana, pineapple, papaya - but also slightly floral notes. The palate is flattered by a creamy structure accompanied by pleasant minerality, a fine acidity and a<br />long lasting finish. South Tyrol DOC 2015<br />WINE DESCRIPTION<br />Our crystal-clear AU Chardonnay Riserva, shimmering in dark straw yellow, initially unfolds a mineral scent of flint and walnut. Gradually, a bundle of aromas of yellow,<br />exotic fruits and flowers enriches the complex bouquet. On the palate, this wine is intense and juicy, in dialogue with a pleasant acidity and fine tannin. It demonstrates its<br />full body and balance with a clear persistence on the finish.<br />SOIL CONDITIONS AND INFLUENCE ON THE WINE<br />Strong loamy sand as well as a high lime and salt content dominate the loose and very deep moraine soil of the Vigna AU. At just under 5%, the humus content is<br />considerable. The considerable clay content results in pleasantly high acidity levels in the Chardonnay grapes and in the wine. The high lime content supports the ripening of<br />yellow fruit notes.<br />HARVEST AND VINIFICATION<br />The grapes are harvested when they have reached phenolic maturity and a balanced sugar-acid ratio. After gentle pressing, the must is left to ferment spontaneously in<br />small oak barrels. On the yeast, the young wine undergoes biological acid degradation. After one year, the wine is brought together and naturally clarified in steel tanks for<br />half a year. At the appropriate moon phase, the AU Chardonnay Riserva is bottled and matures for another year in the bottle.<br /><br />100 % Chardonnay<br />10 - 12 °C<br />Alcohol = 14 %vol<br />Total acidity = 6.1 g/litre<br />Residual sweetness = 0.7 g/litre<br />
