Vinification:
Harvest and grape selection by hand; destemming of the grapes followed by slow maceration at controlled temperature and gentle maceration in stainless steel tanks; malolactic fermentation and ageing for 12 months partly in large wooden barrels (50%) partly in barriques (50%). For the maturation in the barrique barrels, one third new wooden barrels are used. Assemblage three months before bottling.

Goes well with Kitz shoulder braised in olive oil and herbs on asparagus and wild vegetables, beef tagliata on a bed of rocket, rabbit stew or a braised lamb shank with spinach polenta; equally interesting with melanzane alla parmigiana...,

Character:
Colour: sparkling rich ruby red.
Nose: The prominent fruit of blackberries and cranberries combines with the herbal aromas of mint and eucalyptus, complemented by a hint of black pepper, to create a very multi-faceted bouquet.
Taste: A stable tannin structure and the fruit-driven aromas allow the Merlot to unfold optimally on the palate and show a multi-layered structure as well as a profound length.
