Chardonnay<br />This popular grape variety is at home all over the world. In the best individual vineyards of the municipality of Eppan, however, the grapes develop so excellently that they<br />produce a high-quality, powerful yet elegant top wine. Since 1986, the Chardonnay has been part of the Sanct Valentin line and is one of the most important wines of the<br />house. Excellent balance, well-integrated acidity and excellent storage potential.<br /><br />Grape variety: Chardonnay<br />Vine age: 10 to 32 years<br />Growing region:<br />Site: selection of the best single vineyard sites in the municipality of Eppan (450-550m).<br />Exposure: south-east, south-west<br />Soils: sandy calcareous gravel soils (or calcareous gravel soils)<br />Method of cultivation: Guyot<br />Harvest: Late September to early October, hand harvest and grape selection.<br />Vinification: Fermentation, malolactic fermentation and ageing on the lees in barrique tonneaux. Assemblage after almost a year and further maturation for at least eight<br />months in concrete barrels.<br />Yield: 45 hl/ha<br />Analytical data:<br />Alcohol content: 14 %<br />Acidity: 5,55 gr/lt<br />Drinking temperature: 10-12°.<br /><br />Recommended consumption:<br />Likes to accompany strong dishes such as 'fritto misto' (fried seafood), porcini ravioli with cream sauce or risotto with grey cheese and chilli. In contrast to the German models,<br />the wines here in South Tyrol are usually vinified without residual sweetness.<br /><br />Grape variety: Riesling<br />Growing region/climate: Slopes around Bolzano and the Valle Isarco, 500 m above sea level.<br />Harvest: Beginning to middle of October<br />Vinification: Carefully selected grapes are gently pressed and fermented in steel tanks at a controlled temperature. A fine continuous perlage, it appears to us in the glass as a bright yellow colour with green highlights. Fragrant to the<br />nose, with hints of citrus, flowers and traces of peach. The silky and creamy carbonate makes room for the acidity to stimulate salivation. Perfect as an aperitif but also<br />able to display all the versatility of the classic method when accompanying meals. Excellent with freshwater fish, during the entire meal, with poultry, cold white meats and<br />summer salads. Combines successfully with a quality Parmesan cheese. KOLBENHOF<br />VIGNA GEWÜRZTRAMINER<br /><br />The Kolbenhof Gewürztraminer shows an intense golden yellow colour with delicate greenish reflections in the glass. Aromas of ripe yellow fruits, especially peaches and<br />apricots, mingle with exotic scents of lychee, mango and passion fruit. On the palate, these fruity impressions continue, while the wine still has a fine acidity that never<br />makes it seem too lush despite its concentration. A Gewürztraminer that can convince with aromatic length.<br /><br />This Gewürztraminer is a selection from the best vineyards of our Kolbenhof estate in Söll / Tramin. Thanks to the special microclimate, the ideal orientation and the age of<br />its vines, the Kolbenhof estate is one of the great cru sites for South Tyrolean Gewürztraminer. After a gentle pressing and<br />natural sedimentation of the lees, the must ferments at a controlled temperature.<br />Maturation<br /><br />After fermentation, the Kolbenhof Gewürztraminer matures for another 8 months on the fine lees. The bouquet is reminiscent of nettle,<br />apples, green peppers and tropical fruits.<br />With a harmonious balance of acidity and minerality, notes of elderberry, banana and vanilla enrich the lively character of this wine.<br />Thanks to its excellent quality, this wine has been included in the Bernardi collection.
