Fermentation and ageing for 12 months in used barriques.<br />About the wine: the sweet wine cuvée ARUNA is a unique and distinctive meditation wine. Gewürztraminer is considered one of the most difficult grape varieties in the<br />vineyard - Goldmuskateller only develops its delicate aroma in exceptionally good locations. These demanding wines are united at the highest level in the 'Passito' ARUNA.<br />The overwhelming play of aromas shows mountain apricots, Williams pear, lavender honey and ripe exotic fruits. The Gewürztraminer brings extract sweetness and<br />structure. The Goldmuskateller adds dynamic freshness to the wine. The juicy fruit finish is accompanied by a stimulating, vibrant acid-sugar interplay, making for a<br />wonderfully balanced drinking experience. TYPE: Valle de Colchagua DO - ' Cabernet '.<br /><br />PRODUCTION AREA: Colchagua Valley - Peralillo<br /><br />VINE: Cabernet Sauvignon 100%.<br /><br />SOIL TYPE: Soil of volcanic origin, made up of sandy-clayey soil and granite sand.<br /><br />AGE OF THE VINEYARDS: at the beginning of the '90s important replanting works were carried out, the vineyard is subdivided into two parts: the first one is in the middle of<br />the vineyard and the second one is in the middle of the vineyard.<br /><br />VINIFICATION: vinification is carried out according to the traditional Bordeaux method. The grapes are placed in stainless steel tanks for fermentation at a controlled<br />temperature between 25° and 27°C. This is followed by 10-15 days of maceration, during which several repassings are carried out to allow a delicate extraction of the<br />phenolic compounds. The wine is then left to mature for three months in stainless steel tanks to obtain its unique fruity style.<br /><br />COLOUR: intense ruby red<br /><br />BOUQUET: in addition to the typical and varietal herbaceous notes, which are otherwise fine and elegant, the nose displays hints of plums, cherries and small red fruits,<br />followed by spicy and vanilla nuances.<br /><br />PAIRINGS: Perfect with savoury first courses and grilled red meats, this wine is ideal with mature cheeses. This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place.
