The essence of the hills around the wine estate and the lake, full of vigour and warmth.<br /><br />Grape varieties<br />Lagrein 48 %, Merlot 35 %, Cabernet 17 %<br /><br />Location &amp; soil<br />The Manincor estate and the Panholzerhof, both sites are south-east facing overlooking the Lake of Kaltern at an altitude of 250 m above sea level; soils are rich<br />comprising sand and clay mixed with limestone gravel and other morainal deposits. These vineyards are among the warmest in all South Tyrol, pre-destined for the<br />production of great red wines.<br /><br />Expansion<br />Grapes from each parcel of vineyard were crushed separately and fermented in a mixture of oak and cement vats and stainless steel tanks using yeasts occurring naturally<br />in the vineyard. Skin contact lasted ten days and was rigorously controlled, during which time the cap of skins was pushed down into the fermenting liquid daily as it rose to<br />the surface in order to extract velvety, assertive but ripe tannins. Fresh fruit and elegance are the main qualities we strive for in this wine. The young wine was transferred<br />into oak barrels of varying sizes where it matured for twelve months.<br /><br />Description &amp; drinking recommendation<br />Concentrated bright ruby. A rich, seductive berry fruit and spice nose leads to a remarkably succulent, well-structured palate of white and black pepper, dark chocolate,<br />liquorice and damson with silky-textured tannins. Almost Burgundian in its drinkability.<br />Enjoy at optimum maturity from 2023 to the end of 2028.<br />Serve: just below room temperature, 60 - 64 °F<br />Delicious to accompany well-seasoned Mediterranean first courses, peppered lamb steaks and other dishes of fried or grilled red meat.<br /><br />Our claim<br />Biodynamic<br />Vegan<br />

Mason - the sensitive companion.<br /><br />It nestles silkily against the skin, cherries, blackberries and roses linger for a long time, and the coveted Pinot Noir makes the mind sensual at the right time.<br /><br />Grape variety: Pinot Noir.<br />Colour: bright, rich ruby red.<br />Aroma and taste: Raspberries and cranberry fruit, some rose petals and liquorice, ripe in fruit and fresh in spice, fruity and delicate on the palate, velvety and at the same<br />time firm from the tip of the tongue to the finish.<br />Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Vinification: Each batch from the different parcels was vinified separately. The maceration took place in wooden vats, spontaneously with the grape's own yeasts.<br />Maceration lasted two weeks, with the marc cake being macerated once a day. The 12-month wooden barrel ageing took place in barriques, with only 10% new wood and<br />the wine remaining on the fine lees for the entire time. Only then were the individual parcels blended, selecting the best barrels from the highest parcel with the oldest vines<br />for Mason di Mason.<br />Serving temperature: 16 -18 °C.<br />Pairings: roasted and grilled (red) meats, game and matured soft cheeses.<br />

Aromas of ripe yellow fruits, especially peaches and<br />apricots, mingle with exotic scents of lychee, mango and passion fruit. On the palate, these fruity impressions continue, while the wine still has a fine acidity that never<br />makes it seem too lush despite its concentration. A Gewürztraminer that can convince with aromatic length.<br /><br />This Gewürztraminer is a selection from the best vineyards of our Kolbenhof estate in Söll / Tramin. Thanks to the special microclimate, the ideal orientation and the age of<br />its vines, the Kolbenhof estate is one of the great cru sites for South Tyrolean Gewürztraminer. After a gentle pressing and<br />natural sedimentation of the lees, the must ferments at a controlled temperature.<br />Maturation<br /><br />After fermentation, the Kolbenhof Gewürztraminer matures for another 8 months on the fine lees. The fine yeast is stirred weekly (battonage).<br />Recommended food<br /><br />Aperitif, shellfish, Asian dishes and mild Gorgonzola cheese.<br />
