The grapes for this aromatic wine, of a delicate straw yellow colour and with a complex, elegant and musky bouquet, ripen in vineyards well exposed to the sun, from south to south-west, and bring sweetness, flavour and a very long aromatic persistence to the glass, reminiscent of the flavours and aromas of ripe grapes.<br />It ideally accompanies desserts and in particular creams, fruit tarts and small pastries.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: 4800 vines per hectare.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun and encourage photosynthesis on the leaves. According to an old tale, the goldfinch - the 'Cardellino' - builds its nest only in Chardonnay vines, while it does not nest in other grape varieties. To this faithful little bird Elena Walch has thus dedicated her debut, an elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. A wine to which one remains faithful, just as the Cardellino remains faithful to its Chardonnay.<br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, mineral richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length: inviting, refreshing and easy to drink.<br /><br /><br />VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Maturation in large wooden barrels.<br /><br />TASTING NOTES<br />Our Lagrein Elena Walch gleams invitingly with its intensive and dense garnet red colour. The complex bouquet captivates with discreet spicy aromas, with cocoa together with wild berries and sweet cherries in the background. Distinctive tannin structure, smooth fullness, playful yet rustic elegance and youthful freshness as well as a long, juicy finish classify the palate.<br /><br />TERROIR<br />Warmer sites on calcareous soils with clay and sand on both sides of the ridge, southeast and southwest facing. <br />VINIFICATION<br />Must fermentation for approximately 10 days, followed by malolactic fermentation in stainless steel tanks. Maturation for 20 months in French oak barriques. The wine is then being bottle aged for several months before being released. Since 2015, a state-of-the-art fermentation cellar has allowed the grapes to be processed with the utmost care, with whole-grape processing using via gravity fed technology. A highly sensitive destemmer and the gentle transport of the grapes by means of a specialized container, cuvon, which runs on rails, prove to be very gentle on the grapes and preserve their high quality. VINEYARD<br />The vineyards are located on a southeast-facing slope 220 to 260 meters above sea level. The microclimate there is very warm. The soil is loamy with limestone gravel and a layer of sand, which enables good heat storage capacity and drainage.<br /><br />VINIFICATION<br />The grapes undergo mash fermentation in a wooden fermentation barrel at 28 °C with a three-week maceration period. I Frati<br />Lugana Doc<br /><br />The wine that has made the company's image known and continues to do so. It has a direct link with its variety, Turbiana, our indigenous vine. Conceived to be consumed during the year, it expresses its best side many years after bottling. In its youth it is fresh, linear and endowed with great finesse and elegance with delicate notes of white flowers and balsamic, hints of apricot and almond. Time allows it to evolve, expressing its mineral notes with greater determination. The wine acquires its own complexity with hints of iodine, spices and candied fruit. In the mouth it is capable of enveloping the whole palate thanks to an important savoury essence accompanied by lively and exuberant acidity.
