TYPOLOGY: Port<br />PRODUCTION AREA: Douro<br />VINE: Touriga Nacional, Touriga Franca, Tinto Cão, Tinta Francisca, Tinta Amarela, Sousão, Tinta Roriz and others.<br />VINIFICATION: Niepoort Tawny comes from vineyards in the Cima Corgo region of the Douro Valley. The grapes are pressed in the traditional way with subsequent<br />maturation in small, old oak barrels in the lodges in Vila Nova de Gaia.<br />COLOUR: bright brick red<br />BOUQUET: The bouquet is composed of fragrant aromas of red fruits and light nuances of dried fruits.<br />PAIRINGS: Excellent to drink at the end of a meal during dessert, combined with chocolate desserts. It can become a perfect aperitif wine if served slightly chilled, perhaps<br />together with pâté or foie gras.<br />TASTE: The palate is well balanced, with notes of unripe fruit. Exilissi Sell 2007<br /><br />Vintage: After an exceptionally mild winter, the vines sprouted earlier than ever before. April and May were also warmer than average, so that by mid-May the flowering was<br />already over in all locations. This 3-week advance in vegetation lasted until harvest. The cool August and a golden September proved it once again: The last weeks before<br />the harvest are decisive for the quality.<br />Whites and reds were able to ripen perfectly and were harvested at the optimal time. That is why the harvest took longer than ever before. The first grapes entered the<br />cellar on 21 August, the last on 24 October. All in all, it should be a very good vintage. The red wines promise to be the best of the last ten years.<br /><br />Vinification: gentle pressing of the delicate grapes. Fermentation of the unclarified must in 500 l tonnequx, further 15 months of maturation in the same barrel. Bottled in<br />March 2009<br /><br />Harvest conditions: a sunny and warm late autumn allowed the grapes to hang until mid-November, thus enabling the harvest of a very ripe grape.<br /><br />Site/soil: Höfl unterm Stein in Söll near Tramin, situated on a south-eastern slope at 480 to 550 metres above sea level. On gravelly, loamy calcareous gravel soil, there are<br />both 30-year-old pergola plants and wire frames that are over 10 years old, which produce something unique with an extremely low yield of 25hl/ha.<br /><br />Oenologist's notes: an enormously concentrated late harvest with intense aromas of sultanas, apricots and spices. Very smooth and long on the palate. TYPE: AOC Sauternes Premier Cru<br />PRODUCTION AREA: The vineyards of the Sauternes appellation are located on the left bank of the Garonne, about 50 km south of Bordeaux.<br />GRAPE VARIETIES: 83% Sémillon, 17% Sauvignon<br />SOIL TYPE: Clay-sandy soil.<br />VINIFICATION: All batches are pressed individually using a low-capacity pneumatic press. After several hours of cold settling, the must is fermented in new oak barrels<br />produced by Tonnellerie des Domaines in Pauillac. Alcoholic fermentation is interrupted as soon as the desired balance between alcohol and sugar is achieved. After<br />fermentation, the wine is aged in barrels for 24 months.<br />COLOUR: Delicately golden with green highlights.<br />NOSE: The nose is intense and richly aromatic. Initial notes of citrus zest are followed by hints of lemon cake, then toasted notes reminiscent of freshly baked brioche.<br />FLAVOUR: On the palate, there are aromas of mandarin peel and candied orange, enriched by a touch of star anise that emphasises the aromatic freshness of this wine.<br />The rich and dense mouthfeel has good length with a nice bitter finish.<br />

Rosé wine<br /><br />The southern shores of the Benaco have always preserved the tradition of a graceful, fresh and gentle wine such as Rosa dei Frati. A high-level rosé capable of surprising for<br />its simple authority. Fresh and delicate yet incisive, it is capable of being the star of the table. The nose reveals hints of hawthorn blossom, green apple, white almond and<br />wild cherry. In the mouth, it is tasty, fresh, savoury and capable of stimulating the palate thanks to its vivid acidity and hints of small red fruits. The<br />grapes are pressed in the traditional tanks called lagares, followed by maturation of the Port in large old oak vats in the cellars in Vila Nova de Gaia.<br />COLOUR: intense ruby<br />BOUQUET: Intense aroma of wild fruits, spices, notes of dark chocolate, with a slight floral profile, making it a refined and very expressive Port wine<br />PAIRINGS: perfect with desserts in which chocolate predominates, especially dark chocolate.
