TYPE: Valle de Colchagua DO - ' Cabernet '.<br /><br />PRODUCTION AREA: Colchagua Valley - Peralillo<br /><br />VINE: Cabernet Sauvignon 100%.<br /><br />SOIL TYPE: Soil of volcanic origin, made up of sandy-clayey soil and granite sand.<br /><br />AGE OF THE VINEYARDS: at the beginning of the '90s important replanting works were carried out, the vineyard is subdivided into two parts: the first one is in the middle of<br />the vineyard and the second one is in the middle of the vineyard.<br /><br />VINIFICATION: vinification is carried out according to the traditional Bordeaux method. The grapes are placed in stainless steel tanks for fermentation at a controlled<br />temperature between 25° and 27°C. This is followed by 10-15 days of maceration, during which several repassings are carried out to allow a delicate extraction of the<br />phenolic compounds.
