VINSANTO DEL CHIANTI<br />DOC<br />Grape varietals<br />Trebbiano Toscano e Malvasia<br />Production technique<br />Well-ripe grapes are dried for a few months on the racks,<br />after pressing the must rests for at least three years in the<br />typical oak barrels, the caratelli, from 60 to 200 litres. During<br />this period the Vin Santo acquires naturally its alcohol<br />content while maintaining a certain sugar level which helps<br />the development of the details organoleptic characteristics.<br />Organoleptic characteristics<br />Color: intense golden yellow.<br />Bouquet: intense with hints of honey and dried fruit.<br />Taste: full, soft, sweet and with good structure.<br />Winemaker's recommendations<br />Excellent dessert wine, indicated alone or in accompaniment<br />to dry desserts or blue cheeses.<br />Serve at a temperature of 10/12 °C<br />Alcohol content: 15% vol.<br />

<br />South Tyrol DOC<br />Pinot Noir Riserva<br />Sanct Valentin<br /><br />Pinot Noir has been cultivated in South Tyrol since 1850 and is also known in many places as Pinot Noir. It is the winery's most important red wine. This grape variety is a<br />very special challenge for the winemaker, as it is very demanding in terms of soil and climate, and must also be processed with special care in the cellar. For the Pinot Noir<br />Sanct Valentin, which has been part of the prestige line since 1995, only grapes from the best vineyards and oldest vines are used. Extremely low yields and the greatest<br />care produce an elegant and highly sensual wine, characterised by structure, balance and fine tannins.<br /><br />Eye: ruby red<br />Nose: small red berries, strawberry, violet, smoky notes, cinnamon.<br />Taste: spicy, smooth, elegant and seductive<br />Variety description: Pinot noir<br />Growing site: older vineyards in St. Michael-Eppan and surroundings (400-550 m)<br />Exposure: south-southeast to south-southwest<br />Soils: moraine rubble and limestone gravel soils<br />Method of cultivation: Guyot <br />Vine age: 8 to 26 years<br />Harvest: mid-September; harvest and grape selection by hand.<br />Vinification: Cold maceration (three days) followed by fermentation and soft pressing. Fermentation in steel tanks. Malolactic fermentation and ageing in barriques. CLOUDY BAY<br />SAUVIGNON<br />Pure, fresh and vibrant<br /><br />With its extraordinary aromas, Cloudy Bay Sauvignon Blanc was an instant success when it appeared on the market in 1985. This wine put New Zealand on the global wine<br />map and made Sauvignon Blanc famous as a single varietal wine. More than 80 expressions of 98 parcels are used in its creation, with yields kept low to produce a wine<br />with a concentrated aroma. The winemaking process aims to preserve and enhance the fresh, fruity notes, using selected yeasts and stainless steel vats, along with a small<br />percentage of barrel fermentation to give structure but without hinting of oak.<br />TASTING NOTES<br />Intense and vibrant, with aromas of ripe passion fruit, white peach and a hint of lime. The palate is deliciously concentrated and tropical, with saline notes providing<br />structure, while the passion fruit and vibrant citrus acidity bring balance.<br />

Barolo Chinato<br />For about 21 days, small pieces of China Calissaia and China Succirubra bark are steeped in an infusion of alcohol and a very small amount of our classic Barolo. We<br />then add a mixture of aromatic spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our historic<br />Family Recipe. To the aromatic extract thus obtained we finally add the right amount of our classic Barolo, a little sugar and alcohol and leave it to refine for at least 4<br />months in small stainless steel containers. After resting in the bottle for at least 2 months, our Barolo Chinato is ready to be enjoyed in the Piedmontese way, i.e. after<br />meals as a digestif.<br />

Epokale was the first Italian white wine to be awarded 100 points by Robert Parker's Wine Advocate. This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place.
