Barolo Ciabot Mentin 2009...

Ciabot Mentin
BAROLO
D.O.C.G.

The first flag placed by Domenico in Ginestra and the first wine with which he made himself known in the world. Il Bruciato BOLGHERI 2019...

Il Bruciato BOLGHERI 2019...

Il Bruciato 2019
Classification DOC
Vintage 2019
Climate: The 2019 vintage was marked by a generally cold period between April and May and by generally warm and dry weather until July. The initial slight delay in the
vegetative cycle was recovered from the summer onwards. The sudden rise in temperature, especially for the later varieties where fruit set had not yet been completed,
favoured a production characterised by light, sparse bunches. The stable and sunny weather in August and September enabled the grapes to complete their ripening in
optimum conditions. The harvest began with Merlot at the beginning of September and ended with Cabernet Sauvignon at the beginning of October. The other varieties were
also harvested in mid to late September: Syrah and small quantities of Cabernet Franc and Petit Verdot.
Vinification: On arrival at the winery, the selected grapes were destemmed and softly crushed. Fermentation and maceration took place in temperature-controlled stainless
steel tanks for a period of about 10-15 days at a temperature of 28-30 °C. Some of the Merlot and Syrah must was kept at lower fermentation temperatures to preserve the
varietal aromas. Malolactic fermentation took place partly in barriques and partly in stainless steel tanks, and was completed by the end of the year for all varieties. The
Cabernet Sauvignon was then blended with Merlot, Syrah, and small quantities of Cabernet France Petit Verdot. The wine thus obtained was returned to the barrique, where
it rested before being bottled.
Historical data: Tenuta Guado al Tasso is located in the small, prestigious DOC area of Bolgheri, on the coast of the Alta Maremma, about a hundred kilometres south-west
of Florence. This appellation has a relatively short history (it was founded in 1994) but boasts international fame as a new point of reference in the world wine scene.Tenuta
Guado al Tasso covers an area of 1,000 hectares - about 320 planted with vines, the rest with wheat, sunflowers and olive trees - in a splendid plain surrounded by hills
known as the 'Bolgheri amphitheatre' for its particular conformation. The vineyards of Guado al Tasso are mainly composed of Cabernet Sauvignon, Merlot, Syrah, Cabernet
Franc, Petit Verdot and Vermentino grapes. They enjoy a mild climate due to the proximity of the sea: the constant breezes mitigate the summer heat and the rigours of
winter, clean the sky and keep the sunshine index high. Il Bruciato was born in 2002, during one of the most difficult harvests of Tenuta Guado al Tasso, to tell the story of
the unique terroir of Bolgheri in a modern style. Initially, the grape used was that of Guado al Tasso, but over the years the varietal composition has changed and there is
now a dedicated rose of varieties. The Bruciato was not produced in 2003.
Tasting Notes: The 2019 Bruciato shows its usual intense ruby red colour. The nose is characterised by notes of small, intact black fruits, sweet spices and tobacco. The
palate has good structure, harmony and pleasantness of drinking. In the aftertaste, fresh and fruity notes predominate, giving the wine succulence and sweetness.
Franciacorta Ris. Dosage...

DENOMINATION
Franciacorta Riserva.

GRAPE VARIETY
100% pure Pinot Noir.

VINEYARDS OF ORIGIN
3 Pinot Noir vineyards on the 'Belvedere' estate, located in the Municipality of Iseo, at an altitude of 466 metres above sea level, on the hills bordering the lake to the south.

AVERAGE YIELD PER HECTARE
6,400 kilograms of grapes, equivalent to 3,200 litres of wine (wine yield: 50%).

VINIFICATION AND PROCESSING
The Vintage Collection Dosage Zéro Noir is the result of careful selection of the Pinot Noir grapes, first in the vineyard and then in the cellar, and of skilful vinification carried
out with full respect for our know-how. The grapes, freshly harvested by hand in small crates, are traced by vineyard of origin and cooled. Each bunch is selected by expert
eyes and hands. The berry has a colourless pulp but a black skin: in order to create the base for Dosage Zero Noir, it is essential that the juice, the must extracted remains
white or slightly pink. This is why pressing is carried out strictly at low pressure, so that the skin remains intact and does not lose its colour. The must thus obtained
ferments in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the elevage in barrels lasts only 5 months. A
pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. Six months after the harvest, the three base wines from the three
vineyards of origin are blended so that the proportion between delicacy, nervousness, vinosity and aroma is optimal. The Pinot Noir imparts its complex aromas of red fruits
to the wine and gives it body, persistence in the mouth and longevity. The magic of its terroir, combined with the skills of the men, have resulted in a wine of exceptional
purity. To reach its maximum qualitative expression and to develop the characteristic aromatic profile that makes it unique, 8 years of ageing are required. A Franciacorta
rightly ennobled by the 'Riserva' classification. The dégorgement takes place in the absence of oxygen, using a unique system invented and patented by Ca' del Bosco.
This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta wines purer, more pleasant and longer-lived. So that this 'blanc de noir' can
express itself with great personality and convey the typicality of the terroir from which it was born, we have chosen not to add any liqueur at disgorgement. Each packaged
bottle is uniquely marked to ensure traceability.

AGEING ON THE LEES
8 years and 5 months.

DOSAGE AT DISGORGEMENT
No addition of liqueur.

ANALYTICAL DATA AT BOTTLING
Alcohol 12.5% vol.; pH 3.10; Total acidity 6.00 grams/litre; Volatile acidity 0.26 grams/litre.

SULPHITES
Total sulphur dioxide less than 51 milligrams/litre (maximum legal limit: 185 milligrams/litre).
In accordance with the Ca' del Bosco method, the grapes, harvested by
hand in small crates, are promptly codified and cooled in cold rooms.
Each bunch is selected by expert eyes and hands, and then benefits from our exclusive 'bunch spa'. A special system of washing and hydromassage of the bunches,
using three soaking tubs and a system for complete drying. The base wines are obtained exclusively from first-pressing musts. Alcoholic fermentation takes place
exclusively in small oak barrels made from selected woods and matured for at least 3 years. Here it remains on its lees for a further 6 months, also carrying out malolactic
fermentation. No compromises, no concessions: only the wine from the best barrels, from the 15 base wines of origin, is tapped to give rise to Annamaria Clementi. A pair of
flying tanks transfers it by gravity from the barrels to the blending tank. A very long refinement in contact with the yeasts, lasting more than 8 years, determines its unique
profile. An absolute Franciacorta.
