TYPE: Mendoza - ' Malbec Premium '.<br /><br />PRODUCTION AREA: Valle de Uco and Lujan de Cuyo - Mendoza<br /><br />VINE: 100% Malbec<br /><br />SOIL TYPE: Soil of alluvial origin, rich in detritus and clay.<br /><br />VINIFICATION: The grapes are hand-picked and carefully selected. Pre-fermentation takes place at 10°. Continuous pumping over is carried out to extract soft tannins.<br />Malolactic fermentation then begins. Finally the liquids macerate for 15 days to obtain volume, stabilise the wine and improve the tannins.<br /><br />COLOUR: intense ruby red<br /><br />BOUQUET: On the nose, intense aroma of ripe red fruit with spicy notes.<br /><br />SERVING SUGGESTIONS: It can easily accompany menus of meat dishes. Fantastic if paired with mixed grilled meat.<br /><br />TASTE: Round on the palate, with delicate tannins and good concentration in the mouth. After a soft pressing, fermentation is followed by maturation in wooden barrels, before proceeding<br />to refinement directly in the bottle.<br /><br />COLOUR: deep and dense cherry red.<br /><br />BOUQUET: On the nose, dark floral aromas of violets, fleshy notes of currants and oak spices waft from the glass.<br /><br />PAIRINGS: perfect for pairing with meat dishes. Try it with barbecued pork chops.<br /><br />TASTE: In the mouth the dark fruit flavours ring true with notes of plum, currant and blackberry resting on deeper notes of dried cherry and mocha. TYPOLOGY: Sauternes AOC ' Carmes De Rieussec '.<br /><br />PRODUCTION AREA: Sauternes<br /><br />VINE: 94% Sémillon, 3% Sauvignon Blanc, 3% Muscadelle<br /><br />SOIL TYPE: clayey-calcareous soil alternating with alluvial pebbles called Grave.<br /><br />VINIFICATION: after the harvest, the grapes arrived in the cellar were immediately pressed by parcel. The must from each parcel was then put into separate barriques after<br />skimming to carry out fermentation.<br /><br />COLOUR: pale gold.<br /><br />BOUQUET: The nose is a triumph of candid fruit and acacia flowers almost reminiscent of sweet fruits roasted in the sun.<br /><br />PAIRINGS: it is soon paired with dry pastries, but also with blue cheeses, to the traditional local pairing with 'pate du foie gras'. It also lends itself to being a great<br />meditation wine.<br /><br />TASTE: Generous and balanced on the palate. Pleasantly sweet finish with a long persistence.<br /><br />AGING: refined in barriques, 50% new, for a period varying between 16 and 26 months.<br />

Nipozzano Riserva 2016<br />Chianti Rufina Riserva DOCG<br /><br />The emblematic wine of Castello Nipozzano, the historic Frescobaldi estate located a few miles north-east of Florence, Nipozzano Riserva is symbolic of the Tuscan wine-<br />making tradition and the continuing link with the terroir.<br /><br />Climatic trend: the 2016 season at Castello Nipozzano is a splendid vintage. Spring arrived slightly late and was cool, marked by abundant precipitation, especially during<br />the flowering period. Conversely the summer was mild, with very little rainfall from the end of June until harvest. August enjoyed high temperatures and was sunny on the<br />whole.<br /><br />Wine Variety: Sangiovese and complementary varieties<br />Alcohol content: 13%<br />Maturation: barriques - 24 months<br /><br />Vinification and ageing: harvest took place in the first few days of September. As soon as the grapes were harvested, they were taken to the cellar. Once de-stemmed, the<br />natural fermentation process began in thermo-regulated stainless steel vats. The wine remained in the vats to complete maceration. After racking, malolactic fermentation<br />took place in steel as well. At the end of the year, the wine was transferred into barriques, where it was aged for a further 24 months. A further period in the bottle brought<br />Nipozzano 2016 to its full expression as a wine with exceptional balance.<br /><br />Tasting notes: Nipozzano 2016 boasts the characteristics of this superb vintage with strength and finesse. Its intense ruby red colour gives it a bold and elegant character.<br />Red berries and notes of ripe citrus fruit give way to a delicately fruity nose, followed by elegant notes of violet. This is all completed with a slight spiciness. The palate<br />expresses itself with an intriguing, harmonious complexity. Chardonnay 'Cardellino' 2021 - South Tyrol DOC<br /><br />The Chardonnay 'Cardellino' was Elena Walch's first wine and is still probably the winery's most popular wine. According to an old tale, the goldfinch - the 'Cardellino' - only<br />builds its nest in Chardonnay vines, while it does not nest in other grape varieties. Elena Walch has thus dedicated her debut, an elegant Chardonnay full of character, to<br />this faithful little bird, which has won many lovers with its minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long<br />since become a South Tyrolean classic and continues to be the most popular wine at the Walch family's table. A wine to which one remains loyal, just as the Cardellino<br />remains loyal to its Chardonnay.<br /><br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow colour, with a complex interplay of fruity aromas, citrus and orange peel, some lime blossom, mineral<br />richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length:<br />inviting, refreshing and easy to drink.<br /><br />OUTCOME OF THE YEAR 2021: we are delighted with a vintage of outstanding quality, especially for our white wines! A dry and cool spring led to a late flowering of the<br />vines, followed by a warm and dry June. After a volatile midsummer, there was a surprising change in the weather in mid-August, which brought dream weather until the end<br />of September and created the very best conditions for optimal ripening of the grapes. The harvest began in mid-September, about 10 days later than last year. Blue skies<br />and lots of sunshine as well as midsummer daytime temperatures and autumnally cool nights enabled the grapes to reach ideal sugar levels while retaining very good<br />acidity. Accordingly, the wines of the 2021 vintage show a markedly high quality.<br /><br />VINIFICATION: gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months. Morellino di Scansano Docg Riserva Sicomoro<br /><br />Made from a selection of 100% Sangiovese grapes, Morellino di Scansano Riserva Sicomoro is an elegant wine, rich without being opulent.<br /><br />Immediately enjoyable, thanks to its structure, the typical tannins of Sangiovese and the maturation in barriques of various passages, it can also be appreciated 5-10 years<br />after the harvest.<br />Training system: spurred cordon<br />Planting density: 3500 vines/hectare<br />Soil type: sandy loam, clay below 1 m depth<br />Altitude: 300 metres above sea level<br />Age of vineyards: single vineyard over 30 years old<br />Harvest time: first week of October<br />Method of fermentation: harvested when perfectly phenolically mature. The grapes are macerated at 35°C for 12 hours; this is followed by fermentation at a controlled<br />temperature (max. 29°C) and post-fermentation maceration on the skins for a total of 12 days from the start of fermentation. Malolactic fermentation occurs naturally a few<br />days after racking.<br />Maturation: Aging in 225 l French oak barriques (60% first passage, 40% second passage) for 15 months, followed by a short period in steel.<br />Ageing: 18 months in bottle.<br />Description: Morellino di Scansano Riserva Sicomoro Docg is a concentrated ruby-red wine, very pleasant on the nose with sweet spicy and fruity notes of morello cherry,<br />wild berries, cinnamon and vanilla. The palate is full, dry, with powerful but elegant tannins, balanced by alcoholic warmth and softness.
