Grape variety: Pinot Blanc<br />Denomination of Origin: Alto Adige DOC<br />Altitude: 500-700 metres above sea level<br />Orientation: south-east<br />Area: Above Nals, in Sirmian, the exposed slopes lie between 500 and 700 metres above sea level with a south-east orientation. The soil is a permeable moraine deposit<br />consisting of limestone, gneiss, mica, slate and marble, formed millions of years ago by glaciers of the Vinschgau Valley and lies on porphyry, the primary rock of the<br />bedrock.<br />Climate: the alpine climate with mild summer and cool autumn months causes the longer vegetation period and the late harvest in mid-October.<br />Vinification: the grapes are harvested by hand. After a short maceration period, the clarified must ferments for about 3 weeks in 12 hl and 30 hl wooden barrels. The young<br />wine then matures for a further 8 months on the fine lees.<br />Colour: bright straw yellow, beautiful depth.<br />Aroma: pineapple, pink grapefruit, kiwi, fresh hay, a hint of thyme.<br />Taste: compact, full-bodied, spicy and with salty length.<br />Food recommendation: Spaghetti with sardines, fish soup, spelt dumplings with grey cheese.<br />Serving temperature: 10-12° C<br />Storage recommendation: cool at 10-13° C and min. 60% humidity.<br />

<br />Pratto<br /><br />Pratto represents a challenge that we wanted to take up, going beyond conventional schemes while maintaining unaltered respect for the territory. In this late harvest, the<br />aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. <br />Reserva Heredad<br />Reserva Heredad was created to express style, in the world of top of the range sparkling wines. We make it with the objective of offering an elegant, versatile Cava. To do<br />this, we select only the very best wines from each vintage, which will then age in bottle, in contact with the lees, for more than 30 months. This ageing ends when the winery<br />expert gives every bottle the magic touch with the last poignettage or shake of the wrist, which intensi- fies the contact of the lees with the wine, and creates a more<br />complex bouquet.<br /><br />THE VINEYARDS<br />The grapes are 100% hand harvested and transported to the winery in 25kg capacity self draining plastic boxes to prevent grape damage, and thereby avoiding the<br />possibility that the juice might oxidise, with a consequent loss of freshness.<br /><br /><br />IN THE CELLAR<br />The must for Reserva Heredad comes from the lightest pressing of the grapes. We only use the first 50% of the juice pressed. This is known as the flower must, as it is<br />the most aromatic and delicate. The first fermentation takes place in stainless steel tanks at a controlled low temperature of between 14 and 16°C, to retain the primary<br />aromas of the grapes. The blend for Reserva Heredad is made up of nine different wines, each one vinified in separate tanks. The magic of the blend is in ensuring that each<br />one lends its own touch of character to the whole. Macabeo is the dominant grape in Reserva Heredad, contributing acidity and freshness. It also allows the wine to age<br />well, during the 30 months or more that it will be in contact with the lees. Both the first and the second fermentations are carried out using our own selected yeast strains.<br />These give structure, softness on the palate, more complex aromas (honey, dried fruits and flowers), as well as an elegant and persistent mousse. Before disgorgement we<br />give each bottle a last sharp shake, or twist of the wrist, known as a poignettage, lifting the yeast cells from the side of the bottle, and mixing them once more with the<br />wine, thus intensifying the element of autolysis. The riddling or turning of all the bottles of Reserva Heredad is done by hand and in pupitres.<br /><br /><br />IN GLASS<br />Straw yellow in colour, with a small, fine, plentiful mousse. The opening aromas are of the ageing on lees, lightly smokey, with touches of biscuit or bread, which are<br />followed by hints of honey, fruit and flower petals. The palate is excellent, fruity and full of flavour, with dried fruits from the lees ageing, but very elegant, giving the drinker a<br />delightful sense of abundance.<br /><br /><br />ON THE TABLE<br />This Cava defines elegant refreshment, even in its presentation. It is a perfect companion to truffle influenced dishes, such as truffle oil drizzled pastas. White fish - sole or<br />monkfish à la meunière, or even traditional Mediterranean casseroles are perfect companions, as are cooked or cured hams, and soft white cheeses such as brie or<br />camembert. It marries perfectly with meat dishes, such as fillet of venison slow braised in a shallot sauce.<br />

Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our<br />winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance,<br />indicate great ageing potential.<br />Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.<br />Yield: 45 hl/ha<br />Altitude: from 400, more from 500 - 600 metres<br />Exposure: south-east 90%, south 10%.<br />Harvest: end of September - mid-October<br />Bottles produced: about 48,000, 760 magnums and some large sizes<br />Soil: calcareous gravel mixed with clay<br />Age of vines: 10 - 40 years<br />Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains<br /><br />Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled<br />temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.<br /><br />AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August. A great wine of international standard with an expressive body, which can develop its great potential even better after another 2<br />years of bottle ageing.<br /><br />Pinot Noir was first successfully cultivated in South Tyrol at the beginning of the 19th century. BARTHENAU<br />VIGNA S. URBANO PINOT NOIR<br /><br />A Pinot Noir whose dark ruby-red colour already hints at its enormous concentration.<br />If the nose is still somewhat closed at first, it soon releases its aromas in the glass, which are reminiscent of the multi-faceted bouquet of classic Burgundies.<br />The enveloping scent of sour cherries and raspberries is underlined by delicate vanilla tones and fine spicy notes.<br />On the palate, it is very well balanced and convinces with its elegant acidity, well-integrated tannins and an impressively aromatic concentration.<br /><br />The Barthenau Vigna S. Urbano is an expression of our most valuable Cru site. During fermentation, the must is kept in constant contact with the solid grape components.<br />Maturation<br /><br />The ageing in wooden barrels takes place in two different phases: in the first phase, the wine is aged for about 12 months in small oak barrels; in the second phase, after the<br />assemblage, it is aged for about another 8 months in large oak barrels. A rather dry site, with sandy, gravelly moraine soil.<br />Vinification: Maceration for 10 days with gentle circulation of the marc followed by maceration for a further 10-14 days. Racking of the young wine into new/used barriques,<br />malolactic fermentation, several transfers of the wine during the 18 months of ageing.
