Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. According to an old tale, the goldfinch - the<br />'Cardellino' - builds its nest only in Chardonnay vines, while it does not nest in other grape varieties. To this faithful little bird Elena Walch has thus dedicated her debut, an<br />elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino'<br />has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. A wine to which one remains faithful, just as the<br />Cardellino remains faithful to its Chardonnay.<br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, mineral richness<br />and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length: inviting,<br />refreshing and easy to drink.<br /><br />COURSE OF THE VINTAGE 2022<br />An excellent vintage 2022 awaits you! Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar. The 2022<br />vintage began with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The drought did not<br />lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy grapes of very good<br />quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the summer, as well as a<br />somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand. Overall, the wines are complex, with great structure and very<br />good fruit.<br /><br />VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit.
