An explosive harmony.<br /><br />THE NOSE<br />The nose is complete and voluble, an interweaving of flowers and fruits, followed by the union of vegetal and mineral notes. The bouquet is tactile, a discreet invitation to<br />follow the powdery trail of white flowers, edged by the sweetness of apricot and mirabella, and then arriving at the freshness of rhubarb and mint, to the minerality of ash.<br />White pepper.<br /><br />THE PALATE<br />It is energy that dominates the palate. After a pleasant opening, the wine quickly becomes vibrant and then literally explodes. The effervescence is rampant, the sensation is<br />tonic. Mason - the sensitive companion.<br /><br />It nestles silkily against the skin, cherries, blackberries and roses linger for a long time, and the coveted Pinot Noir makes the mind sensual at the right time.<br /><br />Grape variety: Pinot Noir.<br />Colour: bright, rich ruby red.<br />Aroma and taste: Raspberries and cranberry fruit, some rose petals and liquorice, ripe in fruit and fresh in spice, fruity and delicate on the palate, velvety and at the same<br />time firm from the tip of the tongue to the finish.<br />Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Vinification: Each batch from the different parcels was vinified separately. The maceration took place in wooden vats, spontaneously with the grape's own yeasts.<br />Maceration lasted two weeks, with the marc cake being macerated once a day. The 12-month wooden barrel ageing took place in barriques, with only 10% new wood and<br />the wine remaining on the fine lees for the entire time. Only then were the individual parcels blended, selecting the best barrels from the highest parcel with the oldest vines<br />for Mason di Mason.<br />Serving temperature: 16 -18 °C.<br />Pairings: roasted and grilled (red) meats, game and matured soft cheeses.<br />

Barolo Chinato<br />For about 21 days, small pieces of China Calissaia and China Succirubra bark are steeped in an infusion of alcohol and a very small amount of our classic Barolo. We<br />then add a mixture of aromatic spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our historic<br />Family Recipe. To the aromatic extract thus obtained we finally add the right amount of our classic Barolo, a little sugar and alcohol and leave it to refine for at least 4<br />months in small stainless steel containers. After resting in the bottle for at least 2 months, our Barolo Chinato is ready to be enjoyed in the Piedmontese way, i.e. after<br />meals as a digestif.<br />

Epokale was the first Italian white wine to be awarded 100 points by Robert Parker's Wine Advocate. This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place.
