Maurizio Zanella Sebino...

Maurizio Zanella Sebino...

Designation
Sebino Rosso I.G.T.

Grape varieties
Cabernet Sauvignon 50%, Merlot 25%, Cabernet Franc 25%.

Vineyards of provenance
Two Cabernet Sauvignon vineyards planted an average of 26 years ago located in the municipality of Erbusco. One Merlot vineyard planted an average of 24 years ago
located in the municipality of Cazzago San Martino. One Cabernet Franc vineyard planted an average of 23 years ago located in the municipality of Passirano.

Harvest period
30 September 2008.

Average yield per hectare
8,700 kilograms of grapes, equivalent to 5,050 litres of wine (must-to-fruit ratio 58%).

Vinification
Maurizio Zanella is obtained from the separate fermentation of Cabernet Sauvignon, Merlot and Cabernet Franc grapes from Ca' del Bosco's finest vineyards. As soon as the
grapes are picked, using small cases, they are graded and chilled. Each bunch is selected by expert cellar staff before being transported over the maceration vat.
Destemming causes the berries to fall into the vat from above by gravity. This avoids the traditional pumping systems that would produce unwanted herbaceous aromas. At
the 2008 harvest, alcoholic fermentation and maceration took 22 days, with careful monitoring of temperature and punch-downs. Pump-overs were performed daily using a
pair of lift tanks in which the wine, drawn off from the bottom of the vat, is transferred by gravity. The wine is lifted by the flying tanks and poured into the high-capacity vat to
submerge the cap. There is no more natural or effective way of delicately extracting colour and tannins. The still-warm wines are drawn into small oak casks, 60% of which
are new, from selected wood seasoned for at least three years. Only in midwinter, when malolactic fermentation is complete, is the wine racked and the various lots
blended. This is how we make Maurizio Zanella, which continues to mature in wood for about 14 months. Later, the various parcels are blended and the wine is bottled
naturally by gravity flow. Innovative bottling systems ensure that the wine is not subjected to oxidative stress or disturbance, and that no further sulphites are added. Integrity
and healthfulness are guaranteed. Finally, every bottle is given an individual marking to ensure its traceability.

Bottling
14 April 2010.

Bottle ageing
Three years and eight months.

Data at bottling
Alcohol 13.5% Vol.; pH 3.53; Total Acidity 4.60 grams/litre; Volatile Acidity 0.41 grams/litre.

Sulphites
Total Sulphur Dioxide less than 40 milligrams/litre (maximum legal limit: 150 milligrams/litre).
In this way, we obtain a strict
respect for the territorial typicality and the pedoclimatic variety. Alcoholic fermentation takes place at controlled temperature in steel vats at 27° with constant punching
down for about 10 days, followed by post-fermentation maceration on the skins for another 10 days. The malolactic transformation takes place in cold tanks. HistoryRiserva
Ducale was born in 1927, to pay homage to the Duke of Aosta who had reserved his preferences for this wine. Twenty years later, with the first edition of the Riserva Ducale
Oro, Ruffino celebrated an extraordinary thousandth anniversary in 1947. The strict decision to produce Riserva Ducale Oro only in exceptional vintages allows this wine to
age for a long time.Production areaTuscany.
TECHNICAL NOTES
GRAPE VARIETY >=80% Sangiovese + other Chianti Classico vines (Ampelographic Base - Chianti Classico Regulations Art 2).
VINEYARDS Tenute Gretole, Santedame and Montemasso.
AGING12 months in cement, 12 months in large casks of Slavonian oak, 12 months in barrique disecondo passage, 3 months in bottle.

DID YOU KNOW? Amarone Valpol.DOC Pietro...

Amarone Valpol.DOC Pietro...
Pietro Dal Cero
Amarone della Valpolicella Docg

There was a time when the Dal Cero family were Veronese.

Today Igino, Gian Franco and Anna Maria return to the eastern lands of Verona, the birthplace of their father Pietro, to whom this bottle is dedicated, to reaffirm their history
and savour the wind of those places.
They do so with a wine that is emblematic of Veronese wine production in the world, Amarone. The ruby colour is captivating for its timbre and intensity. The fruit is
exuberant with a pleasant black cherry that blends with notes of chocolate and sweet spices.
The finesse elevates the floral component and the purple rose. Balsamic notes emerge more and more convincingly, with hints of star anise and wild mint.
The tertiary elements are subtle and allow one to perceive pleasant notes of arabica and light tobacco. On the table it finds its maximum expression with mature cheeses,
long cooked meats, braised meats and game.
Technical data

Grape varieties used Corvina, Corvinone, Rondinella, Croatina
Soil composition: calcareous, white flakes and clay
Training system: Simple Guyot
Planting scheme: 2,20 x 0,70
Yield per hectare: 60 quintals
Type of vinification: raisining in boxes for 4 months, maceration in steel with prolonged contact
Malolactic fermentation: carried out
Ageing and development: in barrique for 24 months, followed by 12 months in steel and 24 months in bottle
Alcohol content: 17%.
Total acidity: 7.5 g/L
Volatile acidity: 0.80 g/L
pH: 3.60
Dry extract: 40 g/L
