Rosso Toscana (Castello del Terriccio)<br />Producer: Castello del Terriccio<br />First vintage: 2000<br />Grapes: Syrah, Petit Verdot<br />Analytical Data: 14% Vol.<br />Soil type: The soils are rich in iron minerals with the presence of stones and fossils. The perfect slope towards the Mediterranean sea, a unique reflection of the sun, a<br />gentle coastal breeze and plenty of sunlight promote a unique and exclusive ripening.<br /><br />Training system: Spurred Cordon<br />Planting density: 3,600 vines/Ha. for old vineyards; 5,600 vines/Ha. for new vineyards<br />Climatic trend: 2016 was certainly one of the most regular vintages of the last decade. Rainfall met the vines' needs punctually: abundant in March, regular in May and June,<br />important at the end of July and, finally, a warm and sunny August and mid-September. Temperatures were optimal: a mild end to the winter that had caused concern was<br />then regularised by a tenably cool spring that slowed down the development of the bunches, which then benefited from the hot but not torrid summer, with significant<br />temperature swings. Cluster growth was regular and optimal, production was good and ripening was perfect.<br /><br />Harvest period: Harvesting was strictly by hand and took place for the Syrah and Petit Verdot grapes from mid-September. After an initial selection in the vineyard when<br />harvested by hand, the grapes are carefully selected a second time on arrival at the winery on the sorting table.<br /><br />Winemaking notes: After manual selection on the sorting table, the grapes are gently destemmed and pressed, taking care not to break the skin of the berries. Alcoholic<br />fermentation takes place in stainless steel open-cap fermenters at a controlled temperature, with maceration of the grapes, for about 20 days. Daily dèlestages allowed the<br />extraction of the aromatic bouquet and the right balance<br />tannicity, with important structure that will allow long ageing.<br /><br />Ageing: The wine is aged in first and second passage French oak Tonneaux for a period of about 22 months and then blended and bottled.<br />

The 2014 vintage was the first 600 wines to be produced. The hand-picked Chardonnay grapes come<br />exclusively from old vines. After fermentation in the bottle, the sparkling wine matures on the yeast for 55 months. In the glass: stable and fine perlage. Fruity nuances of<br />white peach and yellow tropical fruit, some quince, spiced bread and brioche. The doctor found in Sila, by chance or luck, something unique and wonderful, a kind of mud that<br />he expertly heated in a container over hot coals. It was miraculous for my pain. The experience gained on one of his trips to London led him towards the creation of a<br />masterpiece. With the very rural technique of peating, he managed to distil an out-of-this-world 'peated' gin ... Too bad it was little.<br /><br />Gil Torbato Italiano. The only peated Gin in the world. A distillate born thanks to the richness of our territory, in Calabria, in the beautiful setting of Sila, we brought peat back<br />to light. In fact, some historical books speak of it as a real wealth. My friend Gil will certainly help me live a few more years. He knows more than the devil, medicine and alchemy were his life. He paid attention to facts and curiosities from<br />all over the world. At the Old Customs Warehouse, it was not difficult to hear surreal stories and tales. That year, a traveller told a crazy story that happened in a village not<br />far from us, called Rocca Imperiale; a few words were enough to intrigue him and I knew immediately that he would not waste a moment exploring that dangerous place. I<br />learned on his return, with a hint of envy, that he had found the antidote to the poison of the viper of Rocca Imperiale and not only that, he had discovered in that harsh and<br />rugged territory, the Juniper, which he called 'low altitude'. In distilling the berries combined with other botanicals, he used all his medical and alchemical knowledge to<br />create an authentic, rural Gin.<br /><br />I will never forget his words to describe his experience: 'the rain falls sublimely on my juniper, softening the harsh parts of this territory of Rocca Imperiale, capable of giving a<br />unique fruit, never discovered, never explored. I am jealous of things that are not mine, the possessive instinct destroys me, my hands are full of thorns, my feet hurt, my<br />tiredness seems to vanish at the mere thought that those who try this Gin will feel something unique'. He had a point and his achievements speak for themselves.<br /><br />Gil The Authentic Rural Gin. 'I never dreamed of making a gin without our main botanical.'<br />An authentic gin that was born from a true discovery, a precious distillate with a rural production method. Juniper from 'low altitude' and PGI lemons from Rocca Imperiale are<br />the main botanicals. It is also distinguished by its original colour. A true hymn to the territory.
