The grapes used to produce this finely aromatic Asti spumante come from Moscato bianco vineyards on soil rich in limestone. The continuous 'perlage' and persistent foam are a prelude to the ample and intense perfume reminiscent of orange blossom and sage. Ideal with dessert, the wine of the party, as an aperitif and for any other occasion to remember.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west, with rows oriented to take full advantage of the sun's action on leaves and bunches.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: nr. 4000/5000 vines per hectare from 5 to 40 years.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun's action and encourage photosynthesis on the leaves. VARIETY<br />100% Pinot Grigio<br /><br />VINIFICATION<br />After harvest, the grapes are carefully crushed and pressed. The fresh must is statically clarified at low temperatures and then gently fermented at a controlled temperature of 20°C in steel tanks. The young wine matures in steel tanks for several months on its fine lees.<br /><br />TASTING NOTES<br />Our Pinot Grigio captivates with light straw yellow and fruity notes of ripe pears, white pepper and a bit of sage in the nose. Mineral- salty richness and a crisp acidity are distinctive on the palate. A wine with backbone!<br /><br />TERROIR<br />Steep slopes with southeast and southwest orientation between 250 and 600m. An interplay of brisk mountain and warmer mid-level vineyards. Calcareous soils with clay, sand and porphyric parts. VINTAGE 2022<br />An excellent vintage 2022 is awaiting you! As a result of the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar. The 2022 wine year began with a warm spring, which led to an early start of flowering. The succeeding summer was consistently dry and warm-to-hot by the midsummer. The drought did not cause any problems, not at least thanks to our irrigation systems and smart technology. The warm summer months have resulted in extraordinarily healthy grapes of very good quality and maturity. The acidity values were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work during the summer months, and a slightly earlier harvest. The first grapes were harvested at the end of August - as always entirely by hand. Overall, the wines show complexity, great structure and very good fruit.<br /><br />VINIFICATION<br />Very carefully selected, fully ripe grapes get selected, picked in two harvests. Before pressing, the crushed berries are cold macerated for 6 hours, after which the juice is clarified by refrigeration and natural sedimentation. Fermentation is activated using selected yeasts and the temperature is controlled at 18°C. According to an old tale, the goldfinch - the 'Cardellino' - builds its nest only in Chardonnay vines, while it does not nest in other grape varieties. To this faithful little bird Elena Walch has thus dedicated her debut, an elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. A wine to which one remains faithful, just as the Cardellino remains faithful to its Chardonnay.<br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, mineral richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length: inviting, refreshing and easy to drink.<br /><br /><br />VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. VARIETY<br />100% Lagrein<br /><br />VINIFICATION<br />Traditional temperature controlled fermentation of about 10 days in stainless steel tanks, followed by malolactic fermentation in French and Slavonian oak barrels of 70 and 22hl. Maturation in large wooden barrels.<br /><br />TASTING NOTES<br />Our Lagrein Elena Walch gleams invitingly with its intensive and dense garnet red colour. The complex bouquet captivates with discreet spicy aromas, with cocoa together with wild berries and sweet cherries in the background. Distinctive tannin structure, smooth fullness, playful yet rustic elegance and youthful freshness as well as a long, juicy finish classify the palate.<br /><br />TERROIR<br />Warmer sites on calcareous soils with clay and sand on both sides of the ridge, southeast and southwest facing. <br />VINIFICATION<br />Must fermentation for approximately 10 days, followed by malolactic fermentation in stainless steel tanks. Maturation for 20 months in French oak barriques. The wine is then being bottle aged for several months before being released. Since 2015, a state-of-the-art fermentation cellar has allowed the grapes to be processed with the utmost care, with whole-grape processing using via gravity fed technology. A highly sensitive destemmer and the gentle transport of the grapes by means of a specialized container, cuvon, which runs on rails, prove to be very gentle on the grapes and preserve their high quality. VINEYARD<br />The vineyards are located on a southeast-facing slope 220 to 260 meters above sea level. The microclimate there is very warm. The soil is loamy with limestone gravel and a layer of sand, which enables good heat storage capacity and drainage.<br /><br />VINIFICATION<br />The grapes undergo mash fermentation in a wooden fermentation barrel at 28 °C with a three-week maceration period. After malolactic fermentation, the wine is aged in barriques for twelve months before being lightly filtered and bottled.<br /><br />TASTING NOTES<br />- intense ruby red<br />- intense nose with cinnamon and undergrowth notes, fresh forest berries such as blackberry and blackcurrant;<br />- strong but fine-grained tannin; powerful with a lot of smoothness, fine tobacco and licorice notes on the finish, elegant finish;<br /><br />RECOMMENDATION<br />Goes well with a juicy beef tagliata with arugula and parmesan shavings, venison fillet with walnut crust and red cabbage, braised beef roulades with potato noodles and flavorful cheese.<br /><br />
