<br />South Tyrol DOC<br />Pinot Blanc<br />Schulthauser<br /><br />Pinot Blanc has been cultivated in its second home, South Tyrol, since 1850 and has been one of the most important wines of our winery ever since. Schulthauser was first<br />bottled in 1982 and has since become one of South Tyrol's best-known Pinot Blancs. It is a harmonious, fresh wine with fruity notes that seduces the palate with its<br />creaminess and distinctive acidity.<br /><br />Eye: Straw yellow with green shimmer.<br />Nose: clear fruit nuances of apple, apricot and pear.<br />Palate: lively and balanced with a creamy fruitiness<br />Variety description: Pinot blanc<br />Growing region: Site: Vineyards in 'Schulthaus' above Schloss Moos in Eppan/Berg (540-620m)<br />Exposure: Southeast<br />Soils: Calcareous gravel soils with loam<br />Method of cultivation: Guyot and Pergel<br />Vine age: 10 to 40 years<br />Harvest: End of September, harvest and grape selection by hand.<br />Vinification: The majority (85%) is fermented in steel tanks, the rest in wooden barrels followed by biological acid reduction. In February, the two wines are blended.<br />Drinking temperature: 8-10°.<br />Storage/potential: 4 to 5 years<br />Recommended consumption: An exclusive aperitif and summer wine, but also a versatile food companion: it tastes good with seafood and fish, as well as with delicate<br />dishes of wild fowl. Since 1985 it has represented our family's desire to produce a white wine with body,<br />complexity and longevity like the great red wines of our terroirs.<br />VINIFICATION AND AGING:<br />The Chardonnay is harvested in boxes, gently pressed and briefly decanted cold. It ferments and stays for 10 months on the lees in barriques made of only 1/3 new wood.<br />It then stays in the bottle.<br />NOTES:<br />Spicy, creamy, intense, persistent, ripe, still fresh, non-invasive wood. Long-lived. Produced in small quantities each year.<br />

Barolo Chinato<br />For about 21 days, small pieces of China Calissaia and China Succirubra bark are steeped in an infusion of alcohol and a very small amount of our classic Barolo. We<br />then add a mixture of aromatic spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our historic<br />Family Recipe. To the aromatic extract thus obtained we finally add the right amount of our classic Barolo, a little sugar and alcohol and leave it to refine for at least 4<br />months in small stainless steel containers. After resting in the bottle for at least 2 months, our Barolo Chinato is ready to be enjoyed in the Piedmontese way, i.e. after<br />meals as a digestif.<br />
