Fermentation and ageing for 12 months in used barriques.<br />About the wine: the sweet wine cuvée ARUNA is a unique and distinctive meditation wine. Gewürztraminer is considered one of the most difficult grape varieties in the<br />vineyard - Goldmuskateller only develops its delicate aroma in exceptionally good locations. These demanding wines are united at the highest level in the 'Passito' ARUNA.<br />The overwhelming play of aromas shows mountain apricots, Williams pear, lavender honey and ripe exotic fruits. The Gewürztraminer brings extract sweetness and<br />structure. The Goldmuskateller adds dynamic freshness to the wine. The juicy fruit finish is accompanied by a stimulating, vibrant acid-sugar interplay, making for a<br />wonderfully balanced drinking experience. Fermentation in cement, punctuated by continuous micro-oxygenation, which continues into post-fermentation, preparing the wine for the encounter with<br />alcohol, to initiate the first 'act of giving DOC Marsala'.<br />INNAMORATION: Encounter between wine, siphon (grape must giving DOC Marsala mutated - i.e. whose fermentation has been stopped - added with ethyl alcohol of vine<br />origin), cooked must and a small percentage of alcohol<br />AGING METHOD: 4 years. Passito Comtess<br />Sanct Valentin 2021<br />Passito is the Italian term for wines that are made from air- and sun-dried, almost rosined grapes. This usually takes place in our vineyard, i.e. the grapes remain on the vine<br />until the end of the year. The elegant Passito Comtess delights with intense fruit, a creamy-soft body, with a long finish and flatters the palate with racy-fresh acidity.
