The grapes used to produce this finely aromatic Asti spumante come from Moscato bianco vineyards on soil rich in limestone. The continuous 'perlage' and persistent foam<br />are a prelude to the ample and intense perfume reminiscent of orange blossom and sage. The sweet and inviting flavour is tempered by a stimulating acidity. Ideal with<br />dessert, the wine of the party, as an aperitif and for any other occasion to remember.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west, with rows oriented to take full advantage of the sun's action on leaves and bunches.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: nr. 4000/5000 vines per hectare from 5 to 40 years.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun's action and encourage photosynthesis on<br />the leaves. Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit. Very cold winter: February with snow and minimum temperatures as low as -7°C. With the onset of spring, the weather remained cold and damp and the<br />vines began budding about ten days later than usual. From mid-April, an abnormal rise in temperatures to 29°C favoured abundant flower fertilisation. With the arrival of May,<br />however, the rain returned. It was only from 15 July that the real summer was seen, which continued until 25 August with temperatures up to above average, with almost<br />torrid heat in August. The much-desired summer rain arrived in the third ten days of August and met the water requirements of the vines. The harvest that began on 13<br />August gave us a vintage characterised by a very generous nature, well managed by thinning, with beautiful, healthy and perfectly ripened grapes.<br />Average yield per hectare: 8,300 kilograms of grapes, equivalent to 3,570 litres of wine (wine yield: 43%).<br />Vinification: Franciacorta Vintage Collection wines are the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. Franciacorta Brut Saten...
Satèn is the most delicate and elegant Franciacorta. Produced only in the best vintages, it is made from 100% Chardonnay grapes harvested in the high hillside vineyards.<br />The selection of the grapes is meticulous, to say the least, as is the slow maturation in small white oak barrels. Once assembled, the cu-vée is aged in the cellar for a<br />minimum of 4 years. The abundant mousse, the very fine perlage and the golden straw colour announce enchanting and suave aromas of pink flowers, ripe citrus fruits and<br />noisettes.
