TYPE: AOC Sauternes Premier Cru<br />PRODUCTION AREA: The vineyards of the Sauternes appellation are located on the left bank of the Garonne, about 50 km south of Bordeaux.<br />GRAPE VARIETIES: 83% Sémillon, 17% Sauvignon<br />SOIL TYPE: Clay-sandy soil.<br />VINIFICATION: All batches are pressed individually using a low-capacity pneumatic press. After several hours of cold settling, the must is fermented in new oak barrels<br />produced by Tonnellerie des Domaines in Pauillac. Alcoholic fermentation is interrupted as soon as the desired balance between alcohol and sugar is achieved. After<br />fermentation, the wine is aged in barrels for 24 months.<br />COLOUR: Delicately golden with green highlights.<br />NOSE: The nose is intense and richly aromatic. Initial notes of citrus zest are followed by hints of lemon cake, then toasted notes reminiscent of freshly baked brioche.<br />FLAVOUR: On the palate, there are aromas of mandarin peel and candied orange, enriched by a touch of star anise that emphasises the aromatic freshness of this wine.<br />The rich and dense mouthfeel has good length with a nice bitter finish.<br />

It is the winery's most important red wine. This grape variety is a<br />very special challenge for the winemaker, as it is very demanding in terms of soil and climate, and must also be processed with special care in the cellar. For the Pinot Noir<br />Sanct Valentin, which has been part of the prestige line since 1995, only grapes from the best vineyards and oldest vines are used. More than 80 expressions of 98 parcels are used in its creation, with yields kept low to produce a wine<br />with a concentrated aroma. The winemaking process aims to preserve and enhance the fresh, fruity notes, using selected yeasts and stainless steel vats, along with a small<br />percentage of barrel fermentation to give structure but without hinting of oak.<br />TASTING NOTES<br />Intense and vibrant, with aromas of ripe passion fruit, white peach and a hint of lime. Barolo Chinato<br />For about 21 days, small pieces of China Calissaia and China Succirubra bark are steeped in an infusion of alcohol and a very small amount of our classic Barolo. We<br />then add a mixture of aromatic spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our historic<br />Family Recipe. To the aromatic extract thus obtained we finally add the right amount of our classic Barolo, a little sugar and alcohol and leave it to refine for at least 4<br />months in small stainless steel containers. This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place. <br />South Tyrol Moscato Rosa DOC<br /><br />A rare pleasure in a small edition<br /><br />Castel Sallegg and Moscato Rosa. These two terms have long belonged together in South Tyrol. Not without reason, it was the Princes of Campofranco, ancestors of the<br />current owner Count Georg von Kuenburg, who in 1892 brought this noble grape variety with them when they moved from Sicily to Sallegg Castle in Caldaro and planted it<br />in the warmest soil on Lake Caldaro, where it thrived magnificently. Today, the rose muscatel is one of the rarest varieties in the world. The Moscato Rosa of Castel Sallegg<br />grows at the Seehof in St. Josef am See at 230 m above sea level on the traditional pergola.<br /><br />The production of this wine is very limited: Depending on the weather, Moscato Rosa may not be bottled at all in certain years. Otherwise, up to 1,000 bottles are bottled per<br />vintage.<br /><br />Tasting Notes:<br />A dessert wine whose colour is characterised by a dense raspberry red.<br />On the nose, rich aromas of roses, fine fruit components distantly reminiscent of lychee and ripe, very complex raspberry flavours, supported by an elegant spiciness in<br />the background.<br />Very opulent, repeating the aromas of the fragrance, this powerful wine type presents itself on the palate.<br />Serving temperature: 10-14°C<br />Shelf life: Up to 30 years. Moscato Rosa is Castel Sallegg's most famous wine and, as a variety, is one of the rarest in the world.<br />Food recommendation: Ideal with mature, spicy cheeses, foie gras, desserts with berry fruits (but with sugar restrained). Also perfect as a stand-alone wine in the sense of<br />a meditation wine.<br />Grape variety: 100% Moscato Rosa - Selection Kuenburg: Autochthonous variety.<br />Site: Kaltern - Seehof: 230 m above sea level. Gravel and reddish, ground Grödner sandstone. Warm, air-permeable soils with a special microclimate in the immediate<br />vicinity of Lake Kaltern.<br />Growing system: Traditional pergola<br />Yield per vine: 0.5 kg - 8 hl/ha due to natural trickling.<br />Vinification: The grapes are harvested very late with a minimum gradation of 32°KMW (160 Öchsle). This is followed by a week of maceration in stainless steel tanks.<br />Maturation: 1 year in stainless steel barrels, followed by 12 months in the bottle.<br />Alcohol: 12,5 %<br />Acidity: 7,3 g/l<br />Residual sugar: 161,4 g/l<br />

The grapes for this aromatic wine, of a delicate straw yellow colour and with a complex, elegant and musky bouquet, ripen in vineyards well exposed to the sun, from south<br />to south-west, and bring sweetness, flavour and a very long aromatic persistence to the glass, reminiscent of the flavours and aromas of ripe grapes.<br />It ideally accompanies desserts and in particular creams, fruit tarts and small pastries.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: 4800 vines per hectare.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun and encourage photosynthesis on the<br />leaves. A maximum of 8/9 fruit buds are left.<br />Harvest: 1st or 2nd decade of September, picked by hand.<br /><br />ORGANOLEPTIC DATA SHEET:<br />Denomination: Moscato d'Asti DOCG<br />Grape variety: Moscato<br />Colour: more or less deep straw yellow.<br />Perlage: fine and persistent.<br />Bouquet: rich, intense and fragrant aroma of the Muscat grape reminiscent of wisteria, peach, apricot with hints of sage, lemon and orange blossom.<br />Taste: sweet, delicate, fresh flavour with moderate alcohol content.<br />Serving suggestions: Serve chilled, with dessert, with various pastries, as a thirst quencher at any time of day. Its low alcohol content can bring the whole table together in a<br />festive toast.<br />
