The 2014 vintage was the first 600 wines to be produced. The hand-picked Chardonnay grapes come exclusively from old vines. After fermentation in the bottle, the sparkling wine matures on the yeast for 55 months. In the glass: stable and fine perlage. Fruity nuances of white peach and yellow tropical fruit, some quince, spiced bread and brioche. Creamy yet firm texture, mineral and salty finish.600 BLANC DE BLANCS: The uncompromising one.<br /><br />'When we start a sparkling wine project, we only do so with the aim of being among the absolute top,' says President Andreas Kofler. Our grapes, so rich in fixed acidity, made us think of production by the classic method in line with those of the best<br />Italian companies in the production of sparkling wine. A fine continuous perlage, it appears to us in the glass as a bright yellow colour with green highlights. Fragrant to the<br />nose, with hints of citrus, flowers and traces of peach. The silky and creamy carbonate makes room for the acidity to stimulate salivation. Perfect as an aperitif but also<br />able to display all the versatility of the classic method when accompanying meals. Excellent with freshwater fish, during the entire meal, with poultry, cold white meats and<br />summer salads. Combines successfully with a quality Parmesan cheese. MECZAN PINOT NOIR<br /><br />The Meczan is a very varietal Pinot Noir, which is characterised above all by its softness, its distinctive fragrance and its clear fruity character.<br />It has a vivid ruby red colour with slight garnet reflections. The grapes used to produce this finely aromatic Asti spumante come from Moscato bianco vineyards on soil rich in limestone. The continuous 'perlage' and persistent foam are a prelude to the ample and intense perfume reminiscent of orange blossom and sage. The sweet and inviting flavour is tempered by a stimulating acidity. Ideal with dessert, the wine of the party, as an aperitif and for any other occasion to remember.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west, with rows oriented to take full advantage of the sun's action on leaves and bunches.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: nr. 4000/5000 vines per hectare from 5 to 40 years.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun's action and encourage photosynthesis on the leaves. According to an old tale, the goldfinch - the 'Cardellino' - builds its nest only in Chardonnay vines, while it does not nest in other grape varieties. To this faithful little bird Elena Walch has thus dedicated her debut, an elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino' has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. A wine to which one remains faithful, just as the Cardellino remains faithful to its Chardonnay.<br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, mineral richness and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length: inviting, refreshing and easy to drink.<br /><br /><br />VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. I Frati<br />Lugana Doc<br /><br />The wine that has made the company's image known and continues to do so. It has a direct link with its variety, Turbiana, our indigenous vine. Conceived to be consumed during the year, it expresses its best side many years after bottling. In its youth it is fresh, linear and endowed with great finesse and elegance with delicate notes of white flowers and balsamic, hints of apricot and almond. Time allows it to evolve, expressing its mineral notes with greater determination. The wine acquires its own complexity with hints of iodine, spices and candied fruit. In the mouth it is capable of enveloping the whole palate thanks to an important savoury essence accompanied by lively and exuberant acidity.
