Fermentation in cement tanks, with temperature control and two<br />daily pumpings over for the first 10 days. The wine remains for a further 15 days in contact with the skins before being drawn off and immediately put into 225-litre barriques<br />(80% new), where malolactic fermentation takes place. Maturation in wood lasts about a year, during which time the wine is racked. The wine remains in the bottle for six<br />months before being put on the market.<br />

Description:<br />Aroma of fully ripe wild berries and dark chocolate. Very dense and complex with fine tannins. Elegant Merlot with very good ageing potential.<br />Ageing potential: 6 - 8 years.<br />Recommended food: Goes well with hearty roasted or grilled meats with root vegetables and spicy dark sauces, as well as game dishes and cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Merlot. The grapes come from 20-year-old trellised vineyards with a planting density of approx. 5,000 vines/ha.<br />Sites: Sun-exposed slope. Extremely dry and heat-retaining quartz porphyry weathered soil that only allows low yields.<br />Vinification: Must fermentation at 28-30° C in stainless steel tanks. Gentle circulation of grape skins and juice is used to achieve optimal extraction of colour and extract<br />substances. Further ageing takes place entirely in small wooden barrels for about 12 months. After gentle filling and 12 months of bottle ageing, the wine is put on sale.<br />

Ronchedone<br />Red wine<br /><br />In the area where the first moraine hills rise, red wines of considerable depth and power are also obtained, and Ronchedone is an absolute demonstration of this. Strongly<br />desired from the moment it was felt that certain areas and certain microclimates were suitable for making a wine like this. Marzemino, Sangiovese and 10% Cabernet make<br />it a wine that cannot go unnoticed. The nose is very rich with notes of red fruits, macerated blueberries, marasca cherries under spirits, balsamic and jammy hints. The<br />palate is powerful and incisive, clean, savoury, with a fine acidity that is a sign of the Benaco soil. 2018 CHATEAU CROIX MOUTON 'BORDEAUX SUPERIEUR'<br />THE YEAR.<br />The M printed on the label of this fine-tasting and fleshy Bordeaux Supérieur wine marks the personality and particularities of each vintage and changes colour every year.<br />This cuvée from Château Croix Mouton, which dominates the Dordogne, is made exclusively from Merlot, the emblematic grape variety of the right bank of the Garonne, and<br />has a deep ruby red colour with beautiful shiny reflections. On the palate, small, acidic red fruits (mainly red plum, cherry) follow one another. On the palate it is full-bodied<br />and juicy, full of charming finesse. This wine is best appreciated when young, when its fruity bouquet shows all its vivacity.<br />THE CHÂTEAU CROIX MOUTON ESTATE<br />Château Croix Mouton is located in the town of Lugon on the right bank of the Bordeaux River and covers almost 70 hectares of vines. It is owned by the Janoueix family and<br />thrives on the clayey soil of Carney Island. The 2019 grape varieties focus on Merlot (96%), complemented by Cabernet Franc (2.5%), Malbec (1%) and Petit Verdot (0.5%).<br />The vines are on average 38 years old. The planting density is about 3,600 to 6,000 vines per hectare.<br />The work in the vineyard is meticulous and includes tillage, grassing, thinning and some leaf thinning. After sorting at harvest, vinification takes place in concrete and<br />stainless steel tanks with openings and regular puncturing. Fermentation takes place under temperature control (maximum 26-27 °C). The maturation period is between<br />three weeks and one month. Maturation lasts between three and four months on the fine lees in barrels (20%) and in vats with or without wood (80%).<br />The top Bordeaux produced by the estate are pleasant, fruity wines that tend to be drunk at a young age. Gourmet and fleshy wines that are also quite accessible.<br />
