Final racking with soft presses.<br />Ageing: Malolactic fermentation in stainless steel tanks followed by 12 months in French oak barriques.<br />Organoleptic characteristics: Ruby red colour with purple reflections; intense and complex bouquet with fruity notes of plum and jam and spicy tertiary scents reminiscent of<br />vanilla and liquorice; intense on the palate, with great structure and softness, long finish.<br />Pairings: Robust first courses, red meats and game. Structure and character from Nebbiolo, softness and<br />and elegance from Barbera.<br /><br />First vintage produced: 1981<br />Grape varieties: Nebbiolo 90% + Barbera 10%.<br /><br />Vinification: Nebbiolo and Barbera are vinified separately to obtain the maximum expression of both varieties.
