L'Uccellone was the nickname of a woman who lived on the vineyard hill. Her nose was reminiscent of a bird's beak, and she always wore black: this earned her a nickname<br />in the village. Hence the name Bricco dell'Uccellone.<br /><br />Appellation: Barbera d'Asti DOCG.<br />Grapes and Vineyard: Produced with 100% Barbera grapes from our own vineyards in Rocchetta Tanaro.<br />Winery: Maceration on the skins takes place at controlled temperature and lasts 20 days. The wine then goes into oak barrels where it refines for 12 months, then one more<br />year in bottle.<br />Tasting: Very intense ruby red colour with garnet reflections. Rich, complex bouquet, with considerable concentration and depth; hints of red fruit and small fruits are<br />particularly evident, with some minty spices, vanilla and liquorice in the background. Generous flavour, full-bodied and well-structured, a perfect blend of the characteristics of<br />the vine and the contribution of the wood, in a combination of great softness and class, with a very long aromatic persistence. Accompanies large meat dishes, roasts, also<br />with sauces, mature cheeses.<br />Serving temperature: Serve at 17-18°C.<br />

'The Bacialè, in Piedmontese dialect, is the spouse, the one who arranges marriages. In fact, this wine is the result of a perfect marriage between Barbera and other grapes.<br /><br />Denomination Monferrato Rosso D.O.C.<br />Grapes and Vineyard: Barbera from the vineyards of Castelnuovo Calcea; Merlot from the vineyards of Rocchetta Tanaro and San Marzano Oliveto; Cabernet Sauvignon from<br />the vineyards of Rocchetta Tanaro and San Marzano Oliveto; Cabernet Franc from the vineyards of Rocchetta Tanaro; Pinot Noir from the vineyard of San Marzano Oliveto.<br />Each variety is harvested and vinified separately, starting with Pinot Noir by degree of ripeness, then Merlot, Barbera, Cabernet Franc and finally Cabernet Sauvignon.<br />Vinification: The hand-picked grapes are further selected by experienced personnel before soft destemming-crushing, which ensures greater integrity of the grapes and<br />avoids undesirable herbaceous notes. Fermentation takes place in steel vats, which guarantee better than other materials that the fermentation takes place in a<br />contamination-free environment and that the temperature can be kept under control. During fermentation, the must is pumped over (every 6 hours or so) and délestage (a<br />couple of times in the first 15 days) for a total period of about 3 weeks. At the end, the wines are racked into barriques to optimise colour stabilisation and malolactic<br />fermentation. The wines are then matured in barriques selected according to the different types of wine for 12 months and finally blended. Blending is preceded by a careful<br />tasting to decide the composition, which may vary in percentage terms each year.<br />Serve at: 16-18°<br />

STEINRAFFLER<br />VIGNA LAGREIN<br /><br />A wanderer between worlds. On the one hand dense and concentrated and almost rustic in a pleasant way, it nevertheless reveals a certain elegance. The colour is deep<br />dark and garnet red with an almost black core. The bouquet reveals a mixture of earthy-mineral and spicy notes. The initially delicate fruit develops increasingly in the glass<br />and is reminiscent of dark, ripe plums. On the palate, the spice components continue, with the finish gaining in complexity due to the mineral notes that emerge once again.<br /><br />This grape variety, unique to South Tyrol, finds very good growing conditions in the vineyards of our Steinraffler winery. Here, in 1990, we planted the short-stemmed Lagrein,<br />a variety that had almost fallen into oblivion in South Tyrol, grafted it onto weak-growing rootstocks and grew it on wire frames. The rebirth of this old, autochthonous red wine<br />variety represents for us a happy combination of tradition and innovation.<br /><br />In South Tyrol, only the 'Vigna' classification guarantees the origin of a site wine.<br /><br />Grape variety: Lagrein<br />Soil: Loam and sandy soils<br />Vinification: After delivery, the destemmed grapes enter the fermentation tank. After a short maceration, the mash is fermented for about 10 days.<br />Maturation: It matures for 15 months in small oak barrels, another 7 months after the assemblage in large oak barrels and at least 12 months in the bottle.<br />Food recommendation: Red meats, game, mild cheeses.<br />

Soft pressing and destemming of the bunches to avoid breaking the berries and excessive release of<br />tannins. Alcoholic fermentation in stainless steel vats at a controlled temperature of around 26-28 degrees, without the addition of any external yeasts. Maceration in this<br />vintage was about 10-13 days for the Merlot grapes and 13-16 days for the Cabernet Sauvignon grapes, with frequent pumping over and délestages to obtain more balanced<br />musts and favour aromatic extraction. The care of the individual vines, with particular reference to the training system and production control, allow us to obtain<br />grapes of great balance, both from a sugar and phenolic point of view.<br />VINIFICATION<br />Immediately after the harvest and subsequent pressing, the grapes are sent to a cold pre-maceration phase for 4 or 5 days at a temperature of 18-20°C. This<br />technique best enhances the natural freshness and fragrance of the fruit. Fermentation then continues at a temperature of 25-27°C.<br />Once alcoholic fermentation is complete, the wine is put into wood where malolactic fermentation also takes place.<br />THE WINE<br />A wine with an intense colour with violet reflections, the bouquet is exalted by its scents of fresh fruit, cherry with spicy notes that blend with great balance and elegance<br />with those of vanilla and sweetness given by the wood.
