Grape variety: 100% Pinot Noir (traditional variety).<br /><br />Bottles produced per year: 1800<br /><br />First year of production: 2017<br /><br />Vinification: Selection and destemming of the chilled grapes, 2-day whole-grape cryomaceration, 12 days of fermentation in stainless steel at 23 C°, racking before the end<br />of fermentation. Maturation for 18 months in 700 L tonneaux. Bottled without filtration and stabilisation. Matured in bottle for 18 months.<br /><br />Sensory notes: brilliant, ruby. Fruity nose (undergrowth, ripe red fruit) with cocoa notes. Savoury, pleasantly acidic on the palate with a fine structure and velvety tannin On<br />the palate soft and balanced. Long finish.<br /><br />Accompaniments: braised veal cheek, seasoned Gressoney toma cheese, liver crostini, saffron risotto with ossobuco marrow.<br /><br />Serving temperature: 14/16 °C.<br /><br />Curiosity: Pinot Noir Revei, in patois 'clock', is linked to the history of the medieval tower that dominates our vineyard at Aymavilles. The tower was the home of a hermit<br />watchmaker, whose craft brought us back to the theme of time and its value, in nature and for man. In his creation, time plays a fundamental role from maturation to<br />refinement. Here, time is diluted to obtain, from grapes brought to optimum ripeness, the best expressive potential of the mountain Pinot Noir, skilfully matured in French<br />wood and which, once bottled, still rests in our cellars.<br />

Cultivation area<br /><br />Years of testing by vinification of small quantities of wine have finally led us to the ideal site, the monopollage Ganger. It is located in Mazon, at an altitude of 360 to 380<br />metres above sea level, facing southwest, with a slope of 3-5%, and is characterised by a unique microclimate and deep clay and limestone soils. It is the place of origin of<br />the Vigna Ganger Pinot Noir Riserva.<br />Vinification and ageing<br /><br />The fully ripe grapes are harvested by hand in mid-September and delivered in small containers. The grapes - one fifth of which are vinified as whole clusters - are then<br />gravity-fed into steel vats where fermentation takes place (25 days). After the malolactic fermentation, the wine is matured in barriques for 20 months. Finally, the wine is<br />stored in the bottle for another 18 months.<br />Wine portrait<br /><br />Intense ruby red with aromas of ripe fruit, sour cherries, wild berries, raspberries and a slight hint of marzipan. The wine presents itself elegant and refined with good acidity<br />and spiciness. It has a filigree and at the same time complex structure as well as soft and balanced tannins. This wine elegantly accompanies main courses based on red<br />meat, roast meat and game. RESERVE 2004<br />Composed of three different Cru, Liste, Cannubi and Fossati, completely different from each other. The former, formed 11 million years ago by erosion of overlying soils, has<br />its own unique and complete composition of macro and micro elements, giving it complexity and longevity. Cannubi, on the other hand, was formed around 12 million years<br />ago by sedimentation from the Po Sea and is the most famous and renowned Cru of Barolo. It has an excellent terroir complexity, formed by large calcareous clayey marl<br />soils and a favourable climate that gives incredible elegance and longevity. Fossati was born about 10 million years ago, also by sedimentation from the Po Sea after the<br />earth plates of Africa collided with those of the Italic peninsula. Being a relatively young plot, it has a good percentage of sand in its composition that gives explosive floral<br />and red fruit aromas.<br />

<br />Talò Primitivo di Manduria D.O.P.<br />750 ml<br /><br />In San Marzano, the vine-growers take care of their small vineyard as you would a garden.<br />Their stories are many, as are the names of their families.<br />We have chosen one, Talò, to thank them ideally: family for family, story for story.<br /><br /><br />Grape variety: Primitivo.<br />Area: San Marzano, Salento, Apulia. About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow and with a good presence of skeleton.<br />Cultivation: Espallier (5,000 vines per hectare).<br />Harvest: Second week of September.<br />Vinification: Thermo-controlled maceration for about 10 days followed by alcoholic fermentation with selected yeasts.<br />Ageing: In French and American oak barriques for 6 months.<br />Organoleptic characteristics: Ruby red colour enriched by violet reflections; opulent bouquet reminiscent of ripe cherries and plums, with pleasant notes of cocoa and vanilla.<br />A wine of remarkable structure, softened by the persuasive warmth of the Primitivo, ending in notes of long sweetness.<br />Pairings: Robust first courses, lamb, game with elaborate sauces and hard cheeses.<br />Serve at: 16-18 °C.<br />

The thermal values characterise a rather warm environment, with very low annual rainfall and very high temperature ranges, a condition that has a beneficial<br />influence on the quality of the grapes. This is the classic production area for Primitivo di Manduria PDO<br /><br />Soil: fine-textured residual red soil with a calcareous substratum and sparse rocky outcrops. The famous red hue of these soils derives from an intense presence of iron<br />oxides<br /><br />Harvest: Mid-September<br />Vinification: Manual harvesting of the grapes when slightly overripe; destemming-crushing, pre-fermentation maceration at 8°C for 24-48 hours. Thermo-controlled maceration<br />and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Per la produzione del Cabernet-Merlot Sanct Valentin vengono utilizzate solo uve<br />provenienti da vigneti particolarmente soleggiati. La resa è estremamente bassa e i vitigni vengono vinificati singolarmente. Il Cabernet-Merlot Sanct Valentin, prodotto per la<br />prima volta nel 2013, è un vino rosso di prima classe, estremamente complesso e con tannini fini.
