THE PINE OF BISERNO<br />2020<br />TUSCAN IGT RED<br />It is the purest and most direct expression of Bibbona's unique terroir. The special flavour of the grape makes Pino di Biserno a classic with an intriguing aroma,<br />distinguished by its excellent balance and timeless elegance. It shares an identity with its alter-ego, the Biserno.<br />INDICATIVE PERCENTAGE: Cabernet Franc 23%, Merlot 38%, Cabernet Sauvignon 22%, Petit Verdot 17%.<br />SOIL TYPE: Partly clayey, partly Bolgheri conglomerate.<br />GROWTH: The planting system is spurred cordon with a density of 6,500 vines/ha.<br />CLIMATE CONDITIONS: a moderate vintage with more consistent rainfall in the spring months that made temperatures a little cooler than average. Then the heat arrived in<br />early June bringing with it flowering, albeit with a slight delay. The summer recorded average temperatures with a good temperature difference between day and night. It can<br />be considered a good year.<br />HARVEST: Harvest began in the second week of September with the Merlot harvest, then continued with the Cabernet Franc and ended with the Cabernet Sauvignon and<br />Petit Verdot harvest in the first week of October.<br />VINIFICATION: The grapes were carefully selected on the vibrating belt in the cellar. Destemming and soft crushing; alcoholic fermentation in truncated conical steel tanks<br />for 3-4 weeks at 28°, malolactic fermentation in barriques for 25% of the mass, the remainder in steel.<br />AGING: The wine matures partly for 12 months in new and second-passage French oak barriques, the remaining 10% of the volume remains in steel.<br />TASTING NOTES: Ruby red in colour with purple reflections, on the nose it releases a complexity of aromas ranging from ripe red fruits to Mediterranean scrub and delicate<br />notes of tobacco and spices. Campo ai Sassi 2021<br />Rosso di Montalcino DOC<br />Campo ai Sassi Rosso di Montalcino presents the typical characteristics of Sangiovese grown in this area, in a youthfully disengaged version. The deep soils on which<br />these vineyards are cultivated contribute to perfumed and elegant wines with a light and delicate tannic texture.<br /><br />Climatic trend<br />The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the<br />beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the<br />beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild<br />temperatures and low humidity.<br /><br />Technical notes<br />Varietal: Sangiovese<br />Alcoholic grade: 13.5%.<br />Maturation: in oak barrels<br />Vinification and maturation<br />Once harvested, the Sangiovese grapes were fermented in temperature-controlled stainless steel tanks. During this phase, cap breaking was of fundamental importance,<br />allowing perfect extraction of the polyphenolic substances. Subsequently, the wine spent a period of maturation in the cellar, part of it in wood. Further time in bottle<br />completed its qualitative course before release for consumption.<br /><br />Tasting notes<br />Campo ai sassi 2021 has a wonderful ruby red colour. The bouquet is mainly characterised by fruity<br />fruity and floral notes. Among the fruity notes stand out the currant and morello cherry, among the floral ones certainly the violet. In the mouth it is<br />fresh, soft and persuasive. The tannin is soft. The persistence is pleasantly long.<br />

Hebo<br />Cabernet sauvignon 50%, merlot 40%, sangiovese 10%.<br />The name of an Etruscan settlement of ancient origin, Hebo recalls the historical roots of Suvereto.<br /><br />It is produced from a classic blend of Cabernet Sauvignon, Merlot and Sangiovese, vines introduced to the area by Elisa Bonaparte Baciocchi, princess of Piombino from<br />1805 and enlightened woman of wine.<br /><br />The ruby colour is bright, the aromas reveal fresh scents of sour cherries, violets and blueberries, before turning to seductive mineral hints and nuances of Mediterranean<br />scrub.<br /><br />On the palate, the wine is structured but fresh, savoury and with good momentum. The finish is pleasantly fruity, delicate in its savoury character and with gentle tannins.<br /><br />Production methodSun, wind and three complementary soils<br />The production method is rigorously aimed at defending the territorial connotation.<br /><br />The grapes are harvested in boxes, fermentation is carried out with indigenous yeasts and vinification takes place in steel tanks. The wine is aged for about a year in<br />Slavonian oak barrels and a small percentage of used barriques. Satèn is the most delicate and elegant Franciacorta. Produced only in the best vintages, it is made from 100% Chardonnay grapes harvested in the high hillside vineyards.<br />The selection of the grapes is meticulous, to say the least, as is the slow maturation in small white oak barrels. Once assembled, the cu-vée is aged in the cellar for a<br />minimum of 4 years. The abundant mousse, the very fine perlage and the golden straw colour announce enchanting and suave aromas of pink flowers, ripe citrus fruits and<br />noisettes. The Sangiovese<br />Vin del Fattore is a modern take on the Governo technique used in Tuscany by drying part of the grapes in crates at a controlled temperature.<br /><br />Grapes: Sangiovese 95%, Ciliegiolo 5%.<br />Training system: spurred cordon<br />Planting density: 4000 vines/hectare<br />Soil type: sandy loam<br />Altitude: between 60 and 90 metres a.s.l.<br />Age of vineyards: 5-10 years<br />Harvest time: mid-September for Ciliegiolo, early October for Sangiovese<br />Method of fermentation: The Sangiovese grapes are harvested by hand into small perforated crates and dried in cold rooms until they lose 15% of their weight. Vinification of<br />the Sangiovese grapes at low temperature (max. 27°C) with maceration on the skins for 4-6 days, racking and end of fermentation without further contact with the skins.<br />After about 4 weeks of drying, the Ciliegiolo grapes are pressed and, once full fermentation is reached, the previously vinified Sangiovese is added. Fermentation proceeds<br />until the sugars are almost completely depleted; malolactic fermentation starts naturally at the end of primary fermentation.<br />Maturation: in steel for three months on the fine lees.<br />Bottling: in the month of May following the harvest.<br />Ageing potential: to be drunk young, within 2-4 years after harvesting.<br />Description: Sangiovese Toscano IGT Vin del Fattore is an elegant ruby red wine, with pleasant notes of red fruits (plums, blackberries and cherries) and hints of spices.<br />Medium structured and dry, round on the palate with an elegant fruity finish and round tannins.<br />Food pairing: Perfect with cured meat starters, first courses with meat sauces and main courses.<br />Serving temperature: 16°C<br />Ideal glass: a large Bordeaux-type goblet.<br />
