Picolit<br />DESCRIPTION<br /><br />This is Friuli's noblest wine.<br />Its origins are still shrouded in mystery, and it is only since 1750, thanks to the writings of Count Fabio Asquini, that we have precise documentation of the 'nectar produced<br />by the sparse berries of the bunch'.<br />The peculiarity of this curious and delicate vine is in fact the partial fertilisation of the flower, which determines the growth of very few and concentrated berries per bunch.<br />A complex wine, old gold in colour, it harmonises sweet and acidulous sensations, releasing an enveloping aroma of candied fruit, vanilla and wild flowers. It is then gently pressed and the must obtained is clarified through decantation. Bottling took place in April 2009. Very<br />fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range with<br />sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Fermentation takes place separately for both grape varieties at a<br />controlled temperature of 15°-16°C. Part of the Chardonnay (about<br />20%) is fermented and aged in barriques, while the remaining Chardonnay and Pinot Nero ferment separately in stainless steel at a controlled temperature of 14-16°C and<br />then refine on their lees until the following spring. The blending of the respective wines (Chardonnay from the wood and Chardonnay and Pinot Nero from the stainless steel)<br />then takes place before the addition of the tirage liqueur, bottling and storage in the cellar at a temperature of 10-12°C for the second fermentation and an average yeast time<br />of at least 60 months.
