It was characterised by a three-cycle weather pattern, with sharp contrasts. After a splendid spring, dry and culminating in a torrid June, a cool and rainy summer followed;<br />September was hot, sunny and very dry. The 'key to the grape harvest' lies in the soils and the work of the winegrowers: chalk is a winner because it is more draining, and in<br />the hills it allowed excess summer water to be disposed of and the vigour to be contained. There are pure, delicate and airy aromas with nuances of delicate flowers<br />(honeysuckle, jasmine), ripe citrus (cedar). With aeration, notes of iodine appear accompanied by warmer, sweeter notes of pastry. The palate is dense, finely spicy and<br />invigorating. The attack is fresh and energetic with citrus (orange), dried fruit and Madagascar vanilla. About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow and with a good presence of skeleton.<br />Cultivation: Espallier (4,500 vines per hectare).<br />Harvest: Mid-September.<br />Vinification: Thermo-controlled maceration for about 10 days followed by alcoholic fermentation with selected yeasts.<br />Ageing: In French oak barriques for 6 months.<br />Organoleptic characteristics: Colour purple red with violet reflections: intense and persistent bouquet, with hints of blackcurrants and berries, spicy, with balsamic and vanilla<br />notes. At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international vines such as Cabernet or Merlot, in<br />order to maintain the authentic formula of the most famous of Italian wines while seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes.
