TYPE: California Wines - Founders' Estate<br /><br />PRODUCTION AREA: Napa Valley<br /><br />VINE: Cabernet Sauvignon 100%.<br /><br />SOIL TYPE: Soil rich in clay.<br /><br />VINIFICATION: harvested by hand in order to select only the best grapes. After a soft pressing, fermentation is followed by maturation in wooden barrels, before proceeding<br />to refinement directly in the bottle.<br /><br />COLOUR: deep and dense cherry red.<br /><br />BOUQUET: On the nose, dark floral aromas of violets, fleshy notes of currants and oak spices waft from the glass.<br /><br />PAIRINGS: perfect for pairing with meat dishes. Try it with barbecued pork chops.<br /><br />TASTE: In the mouth the dark fruit flavours ring true with notes of plum, currant and blackberry resting on deeper notes of dried cherry and mocha. The tannins are robust<br />and help support the fruit flavors. The finish is long and persistent.<br /><br />AGING: Aged in French oak barrels (90% new) for 20 months.<br />

TYPOLOGY: Sauternes AOC ' Carmes De Rieussec '.<br /><br />PRODUCTION AREA: Sauternes<br /><br />VINE: 94% Sémillon, 3% Sauvignon Blanc, 3% Muscadelle<br /><br />SOIL TYPE: clayey-calcareous soil alternating with alluvial pebbles called Grave.<br /><br />VINIFICATION: after the harvest, the grapes arrived in the cellar were immediately pressed by parcel. The must from each parcel was then put into separate barriques after<br />skimming to carry out fermentation.<br /><br />COLOUR: pale gold.<br /><br />BOUQUET: The nose is a triumph of candid fruit and acacia flowers almost reminiscent of sweet fruits roasted in the sun.<br /><br />PAIRINGS: it is soon paired with dry pastries, but also with blue cheeses, to the traditional local pairing with 'pate du foie gras'. It also lends itself to being a great<br />meditation wine.<br /><br />TASTE: Generous and balanced on the palate. Pleasantly sweet finish with a long persistence.<br /><br />AGING: refined in barriques, 50% new, for a period varying between 16 and 26 months.<br />

Intense rich fruity nose crammed with pure blackberry, cassis, cherry and plum aromas interwoven with notes of spice.<br />The palate full bodied and round, with a smooth velvety texture balanced by firm mouth filling tannins. The juicy black fruit flavours linger into the rich luscious finish.<br />Pairing suggestions<br />The rich black fruit flavours of Bin 27 are a perfect match for chocolate and berry fruit dishes. A chocolate fondant with strawberries makes a deliciously hedonistic<br />combination with Bin 27, the rich creamy chocolate and luscious ripe strawberries blending seductively with the blackcurrant and cherry fruitiness of the wine. Bin 27 is also<br />excellent served after a meal with bitter chocolate with a high cocoa content or a plate of chocolate brownies or truffles. Like all youthful red Ports, Bin 27 is an excellent<br />match for soft ripe cheeses and can be served on its own at the end of the meal or any other relaxed occasion in a generously proportioned wine glass.<br />Description<br />Although for connoisseurs and collectors Fonseca is synonymous with Vintage Port, to thousands of wine drinkers and Port lovers, the wine that springs to mind is Bin 27.<br />This rich and fruity reserve blend is sold all over the world and has a particularly loyal following in North America.<br />Fonseca Bin 27 was launched in Britain nearly 50 years ago, in 1972. At the time the market for Port was undergoing a profound change. Consumers were becoming more<br />knowledgeable and demanding in their choice of wine. No longer content with the simple young Ports that until then had accounted for much of consumption, they sought<br />more sophisticated and distinctive wines both to enjoy at home and when dining out.<br />

BARTHENAU<br />VIGNA S. URBANO PINOT NOIR<br /><br />A Pinot Noir whose dark ruby-red colour already hints at its enormous concentration.<br />If the nose is still somewhat closed at first, it soon releases its aromas in the glass, which are reminiscent of the multi-faceted bouquet of classic Burgundies.<br />The enveloping scent of sour cherries and raspberries is underlined by delicate vanilla tones and fine spicy notes.<br />On the palate, it is very well balanced and convinces with its elegant acidity, well-integrated tannins and an impressively aromatic concentration.<br /><br />The Barthenau Vigna S. Urbano is an expression of our most valuable Cru site. It is located in the heart of the vineyards around our estate Barthenau near Mazon.<br />This Pinot Noir reflects the enormous potential of this unique site, where vines grow, some of which are more than 55 years old.<br /><br />Only the classification 'Vigna' guarantees the origin of a site wine in South Tyrol.<br />VSU<br />Hofstätter Classification<br /><br />Grape variety<br /><br />Pinot Noir<br />Soil<br /><br />Conglomerate of clay, limestone and porphyry soils.<br />Vinification<br /><br />After delivery, the majority of the grapes are lightly crushed and destemmed, 25% enter the fermentation barrel intact. After a short, cool maceration to refine the fruit<br />bouquet, the wine ferments for about 10 days. During fermentation, the must is kept in constant contact with the solid grape components.<br />Maturation<br /><br />The ageing in wooden barrels takes place in two different phases: in the first phase, the wine is aged for about 12 months in small oak barrels; in the second phase, after the<br />assemblage, it is aged for about another 8 months in large oak barrels. After bottling, the wine is stored for another 8 months in the cellars of Ansitz Barthenau.<br />Food recommendation<br /><br />Red meats, game, mild cheeses.<br />

Description<br /><br />Very deep violet/black colour. Highly dense bouquet, chassis, blackberries. Very powerful yet elegant attack, densely concentrated tannins on the palate, powerful<br />backbone and enormously long finish.<br /><br />High ageing potential: 10-15 years.<br /><br />Recommended food: Goes well with strong dishes with red meat, grilled or roasted, but especially with game and with spicy cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Cabernet Sauvignon.<br />Sites: The vineyard site is located at an altitude of 430 m above sea level with optimal sun exposure. A rather dry site, with sandy, gravelly moraine soil.<br />Vinification: Maceration for 10 days with gentle circulation of the marc followed by maceration for a further 10-14 days. Racking of the young wine into new/used barriques,<br />malolactic fermentation, several transfers of the wine during the 18 months of ageing. Marchese Antinori Vinsanto Chianti Classico DOC 2016<br /><br />Climate: After an autumn and winter that tended to be mild and not very rainy, spring 2016 began with good weather in Chianti Classico, bringing bud break about 10 days<br />earlier than the historical average. Starting in May and during the first half of June, rainfall and average cool temperatures were recorded, but did not affect the decisive<br />phases of flowering and fruit set. The summer up to the end of August was hot, dry and without heat peaks: optimal conditions for maintaining an excellent vegetative-<br />productive balance and ensuring constant growth of the grapes. Harvesting took place between 7 and 10 September.<br /><br />Vinification: the grapes, sourced exclusively from the vineyards of the Antinori estates in Chianti Classico, were carefully selected and harvested in boxes; they were then<br />placed by hand on the special mats of the appassitoio (drying room) of the Tignanello estate or on the penzane of the Pèppoli estate (mobile frames where the bunches are<br />hung in suspension). The grapes, left to dry until the end of December, were then softly pressed in order to maintain their organoleptic and aromatic characteristics. The<br />must obtained was put into the typical 'caratelli', made from different types of wood and with a capacity varying between 50 and 200 litres, where the long, slow alcoholic<br />fermentation took place. The wine remained in the kegs for about 3 years and was then blended and finally bottled.<br /><br />Historical data: The production of Vinsanto in Tuscany dates back at least to medieval times: it is considered a true regional speciality and the Antinori family has always<br />produced it. The first vintage of Vinsanto Tenute Marchese Antinori (a 'natural' production vinsanto) was, however, 1987.<br /><br />Tasting Notes: The Marchese Antinori Vinsanto has a dark amber colour with golden reflections. On the nose sweet notes of dried fruit, such as hazelnut and date, combine<br />with an intense sensation of candied orange, honey, and a slight hint of cinnamon. On the palate it is full, soft, supported by a pleasant freshness that makes it lively and<br />pleasant. Good persistence on the palate.<br />
