PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The<br />strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for<br />chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br />

Pinot Nero 2022<br />South Tyrol DOC<br /><br />VINEYARDS: 100% Pinot Noir<br /><br />VINIFICATION: Traditional maceration for 10 days at controlled temperature in steel barrels. Subsequent malolactic fermentation and ageing in medium French oak barrels<br />(22hl) and partly in steel tanks.<br /><br />DEGUSTATION: The Pinot Noir Elena Walch presents itself with a clear, fresh ruby red. A fruity play of aromas with red berries, cherries and raspberries as well as spicy<br />notes with some white pepper characterise the nose. On the palate, the wine convinces with a juicy structure and inviting freshness, with soft, velvety tannins, discreet spice<br />in the background as well as a youthfully elegant finish.<br /><br />TERROIR: An interesting combination of vineyards in fresher sites between 400m a.s.l. up to 600m a.s.l.. Limestone and porphyry soils in south-eastern and south-western<br />exposure. Harvested and selected by hand with the utmost care.<br /><br />LESE 2022: An excellent vintage 2022 awaits you! Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar.<br />The 2022 wine year started with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The<br />drought did not lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy<br />grapes of very good quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the<br />summer, as well as a somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand. Giacomo loved elastic ball, a Piedmontese game played in the Acquese hills, an area with a vocation for the production of Brachetto. So it was that Giacomo, like his father<br />before him, inherited the nickname of a fist-ball champion 'Braida', and in 1967 the family began producing Brachetto d'Acqui.<br /><br />Denomination<br />Brachetto d'Acqui DOCG.<br />Grapes and Vineyard: produced with grapes: Brachetto 100%.<br />Winery: steel tanks for fermentation and maceration of the skins at controlled temperature for 36-48 hours. Passage in autoclave for frothing. After stabilisation and<br />microfiltration, bottle ageing follows.<br />Tasting: light ruby red colour with purple reflections, lively foam and insistent perlage. Lush, fragrant and aromatic bouquet, with clear hints of ripe red fruit and dried roses.<br />Sweet, soft, delicate, sparkling, persuasive flavour with a long aromatic persistence. It goes well with strawberries and wild berries, as well as with nuts, hazelnuts, almonds,<br />pistachios and figs.<br />The most traditional pairing, with dessert at the end of the meal or mid-afternoon, is with dry pastries and baked goods, from Christmas panettone to tarts. Braida Brachetto<br />d'Acqui is perhaps the only wine in the world that, above all, goes well with chocolate.<br />Serving recommendations: Serve at 6-8°.<br />

STEINRAFFLER<br />VIGNA LAGREIN<br /><br />A wanderer between worlds. On the one hand dense and concentrated and almost rustic in a pleasant way, it nevertheless reveals a certain elegance. The colour is deep<br />dark and garnet red with an almost black core. The bouquet reveals a mixture of earthy-mineral and spicy notes. The initially delicate fruit develops increasingly in the glass<br />and is reminiscent of dark, ripe plums. On the palate, the spice components continue, with the finish gaining in complexity due to the mineral notes that emerge once again.<br /><br />This grape variety, unique to South Tyrol, finds very good growing conditions in the vineyards of our Steinraffler winery. Here, in 1990, we planted the short-stemmed Lagrein,<br />a variety that had almost fallen into oblivion in South Tyrol, grafted it onto weak-growing rootstocks and grew it on wire frames. The rebirth of this old, autochthonous red wine<br />variety represents for us a happy combination of tradition and innovation.<br /><br />In South Tyrol, only the 'Vigna' classification guarantees the origin of a site wine.<br /><br />Grape variety: Lagrein<br />Soil: Loam and sandy soils<br />Vinification: After delivery, the destemmed grapes enter the fermentation tank. After a short maceration, the mash is fermented for about 10 days.<br />Maturation: It matures for 15 months in small oak barrels, another 7 months after the assemblage in large oak barrels and at least 12 months in the bottle.<br />Food recommendation: Red meats, game, mild cheeses.<br />

Prolonged maceration with the skins lasts<br />up to 2 days to extract colour, aroma and density in the mouth. Malolactic fermentation takes place in new barrels and stainless steel tanks, depending on the parcels and<br />their origin.<br />COLOUR: Deep and luminous red.<br />BOUQUET: A bouquet with beautiful notes of toasted wood and spices, combined with liquorice-based candied red fruits.<br />FLAVOUR: Full-bodied on the palate with a background of ripe fruit and elegant, soft tannins. A long silky aftertaste.<br />AGEING: Once the process is complete, the wines are aged in barrels and racked every 6 months. For 12 months they are aged in French (6%) and American (4%) oak<br />barrels. Maturation in bottles for at least one year before marketing.<br />
