The Sauternes and Barsac AOCs are located south of Bordeaux, specifically in the Graves. Both AOCs date back to 1936. The area known as Sauternais comprises five<br />communes: Barsac, Bommes, Fargues, Preignac and Sauternes; while that of Barsac exclusively comprises the commune from which it takes its name. It is worth noting<br />that this specification allows Barsac producers to name their wines both Barsac and Sauternes AOC (both are often mentioned on the label), while Sauternes producers can<br />only name their wines Sauternes AOC. The area's soils are of alluvial origin with a good presence of limestone; what gives this area its unique characteristics is the<br />microclimate created by the Garonne and Ciron rivers and its proximity to the Atlantic Ocean: these presences are decisive in favouring the development of pourriture noble,<br />noble rot, on the grapes, creating a unique concentration. The varieties used for the AOC Sauternes and Barsac are: Sémillon, Sauvignon Blanc and Muscadelle.<br />The quality of the wines produced in these areas has a long history, in fact as early as 1855 Napoleon III, drawing up the first classification of Crus, recognised Château<br />d'Yquem as the only Premier Cru Supérieur located outside the Medoc, followed by two other categories: Premier Cru (11 Châteaux) and Deuxième Cru (15 Châteaux).<br /><br />Varieties: Sémillon, Sauvignon Blanc, Muscadelle.<br /><br />Vineyards: The Château Lamothe Guignard vineyards are located on two different terroirs, one of which, the most important, lies on higher plateaus with gravelly soils, while<br />the other slopes gently down the clay-gravelly slopes facing north and north-west. 90% of the grapes produced are Semillon, the remaining 10% being Sauvignon and<br />Muscadelle.<br /><br />Vinification: the Sémillon, Sauvignon Blanc and Muscadelle grapes are vinified separately; three quarters of the must, of good organoleptic quality, is obtained in the first<br />pressing, but the one with the highest sugar content is obtained from the next two. Fermentation is carried out by indigenous yeasts and lasts two to four weeks. The ageing<br />of Château Lamothe Guignard Sauternes lasts from eighteen to twenty months in oak barrels.<br /><br />Characteristics: Château Lamothe Guignard is rich, opulent on the nose. The finish is full with notes of honey.<br />

Kracher is<br />based in Illmitz, on the Hungarian border, and has been run since 2007 by Alois' son Gerhard Kracher, with the help of his wife Yvonne: it is Austria's leading winery for<br />sweet wines. The varieties used are Welschriesling, Chardonnay, Traminer, Scheurebe, Muskat-Ottonel, and in some vintages also Zweigelt. Kracher harvests and vinifies<br />small batches, using a number series to distinguish them: a higher number corresponds to a higher sugar concentration in the wine. Two types of wine are produced: Cuvée,<br />sweet wines of medium concentration, Beerenauslese and Eiswein; Kollektion, very concentrated sweet wines produced according to two different methods: Zwischen den<br />Seen (traditional with fermentation in steel or wooden barrels) and Nouvelle Vague (modern with the use of new barriques). The presence of this river together with Lake Neusiedl creates<br />an ideal warm and humid climate for the formation of noble rot on the grapes produced<br />in the area.<br /><br />Vinification: The Beerenauslese Cuvée is partly (85%) fermented and matured<br />in stainless steel, the other part (15%) in large barrels; maturing lasts for 12<br />months.<br /><br />Characteristic properties: The Beerenauslese Cuvée has aromas of white peaches and honeydew.<br />honeydew, while the palate reveals notes of citrus fruits, tangerine, ripe yellow peach. The soil is a permeable moraine deposit<br />consisting of limestone, gneiss, mica, slate and marble, formed millions of years ago by glaciers of the Vinschgau Valley and lies on porphyry, the primary rock of the<br />bedrock.<br />Climate: the alpine climate with mild summer and cool autumn months causes the longer vegetation period and the late harvest in mid-October.<br />Vinification: the grapes are harvested by hand. After a short maceration period, the clarified must ferments for about 3 weeks in 12 hl and 30 hl wooden barrels. The young<br />wine then matures for a further 8 months on the fine lees.<br />Colour: bright straw yellow, beautiful depth.<br />Aroma: pineapple, pink grapefruit, kiwi, fresh hay, a hint of thyme.<br />Taste: compact, full-bodied, spicy and with salty length.<br />Food recommendation: Spaghetti with sardines, fish soup, spelt dumplings with grey cheese.<br />Serving temperature: 10-12° C<br />Storage recommendation: cool at 10-13° C and min. 60% humidity.<br />

TYPOLOGY: Sauternes AOC ' Carmes De Rieussec '.<br /><br />PRODUCTION AREA: Sauternes<br /><br />VINE: 94% Sémillon, 3% Sauvignon Blanc, 3% Muscadelle<br /><br />SOIL TYPE: clayey-calcareous soil alternating with alluvial pebbles called Grave.<br /><br />VINIFICATION: after the harvest, the grapes arrived in the cellar were immediately pressed by parcel. The must from each parcel was then put into separate barriques after<br />skimming to carry out fermentation.<br /><br />COLOUR: pale gold.<br /><br />BOUQUET: The nose is a triumph of candid fruit and acacia flowers almost reminiscent of sweet fruits roasted in the sun.<br /><br />PAIRINGS: it is soon paired with dry pastries, but also with blue cheeses, to the traditional local pairing with 'pate du foie gras'. It also lends itself to being a great<br />meditation wine.<br /><br />TASTE: Generous and balanced on the palate. Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our<br />winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. Gewürztraminer Vigna 'Kastelaz' 2020<br /><br />The Vigna 'Kastelaz' is a unique steep slope directly above the wine village of Tramin and is one of the exclusive southern vineyards of South Tyrol. A 'Vigna' is an<br />additional designation of origin; the term stands for a precisely delineated and mapped vineyard. Due to its extreme slope of up to 63 degrees, the Vigna 'Kastelaz' is<br />elaborately laid out in narrow terraces. Moreover, it is entirely south-facing - a rarity in South Tyrol. Kastelaz is a side fan of postglacial origin and consists of a layered<br />structure of loose limestone soils interspersed with sand and hard rock such as granite and porphyry. The microclimatic conditions of the Vigna 'Kastelaz' are also rich in<br />contrasts: during the day the vines can benefit from the warm, extremely sunny southern exposure, while from late afternoon a strong wind and later the fresh evening<br />mountain air provide cool temperatures. Here, between 330 and 380 metres above sea level and with extremely low vine yields, some of Elena Walch's absolute top wines<br />are produced.<br /><br />'The Gewürztraminer Vigna 'Kastelaz' has long been one of the most famous Gewürztraminers on the international scene. It presents itself with a rich, golden yellow colour<br />and a beguilingly complex bouquet: elegant and mineral, with aromas of roses and lychee as well as some acacia honey in the background. The wine is also convincing and<br />complex on the palate: with an elegant structure, stimulating acidity, harmonious, spicy freshness and a delicate, juicy finish. A wine with a lot of finesse and character!'<br /><br />LESE 2020<br />Spring 2020, with its beautiful weather and warm temperatures, spring flowers in the garden and thick blanket of fresh snow on the mountains, led to the relatively early<br />development of the vines, which settled down again with the cooler temperatures in June. After a warm midsummer, the harvest started in the first days of September. The<br />autumn was characterised by warm days and cool nights, but also by some freak weather, whereby the careful cultivation of the vineyards in early summer was noticeable.<br />The 2020 vintage resulted in wines of great South Tyrolean typicity: The young white wines stand out with fresh liveliness and clear aromatic expression, the red wines show<br />very good structure and straight, fine fruit.<br />VINIFICATION Before pressing, the grapes are left to macerate for about 6 hours. Gentle pressing and static pre-clarification of the must by cooling. Growing region<br />The best grapes of this variety come from the growing areas of Girlan, Montiggl and Eppan Berg at 500 m above sea level. Marchese Antinori Vinsanto Chianti Classico DOC 2016<br /><br />Climate: After an autumn and winter that tended to be mild and not very rainy, spring 2016 began with good weather in Chianti Classico, bringing bud break about 10 days<br />earlier than the historical average. Starting in May and during the first half of June, rainfall and average cool temperatures were recorded, but did not affect the decisive<br />phases of flowering and fruit set. The summer up to the end of August was hot, dry and without heat peaks: optimal conditions for maintaining an excellent vegetative-<br />productive balance and ensuring constant growth of the grapes. Harvesting took place between 7 and 10 September.<br /><br />Vinification: the grapes, sourced exclusively from the vineyards of the Antinori estates in Chianti Classico, were carefully selected and harvested in boxes; they were then<br />placed by hand on the special mats of the appassitoio (drying room) of the Tignanello estate or on the penzane of the Pèppoli estate (mobile frames where the bunches are<br />hung in suspension). The grapes, left to dry until the end of December, were then softly pressed in order to maintain their organoleptic and aromatic characteristics. The<br />must obtained was put into the typical 'caratelli', made from different types of wood and with a capacity varying between 50 and 200 litres, where the long, slow alcoholic<br />fermentation took place. The wine remained in the kegs for about 3 years and was then blended and finally bottled.<br /><br />Historical data: The production of Vinsanto in Tuscany dates back at least to medieval times: it is considered a true regional speciality and the Antinori family has always<br />produced it. The first vintage of Vinsanto Tenute Marchese Antinori (a 'natural' production vinsanto) was, however, 1987.<br /><br />Tasting Notes: The Marchese Antinori Vinsanto has a dark amber colour with golden reflections. On the nose sweet notes of dried fruit, such as hazelnut and date, combine<br />with an intense sensation of candied orange, honey, and a slight hint of cinnamon. On the palate it is full, soft, supported by a pleasant freshness that makes it lively and<br />pleasant. Good persistence on the palate.<br />
