The perlage is fine and persistent. Nose: bouquet of rare intensity and fragrance, in which the varietal fruitiness is<br />in perfect harmony with hints of honey, combined with notes of white chocolate, spices and citrus fruits.<br />Taste: elegant and harmonious, velvety-bodied and composite: the fragrances of acacia honey and ripe hay combine well with floral notes. AURATUS Gewürztraminer<br />South Tyrolean Gewürztraminer Auratus DOC<br />Growing region: Our Gewürztraminer AURATUS grows in its place of origin, Tramin, on the South Tyrolean Wine Road. In an exposed sunny position in the fraction Rungg<br />near Tramin, we use the ideal conditions for the production of physiologically ripe Gewürztraminer grapes. The vines grow at an altitude of 320 - 400 metres above sea level<br />in clayey loam soil.<br />Vinification: The fully ripe and selected grapes are subjected to a cold maceration of about seven hours before pressing. The temperature-controlled fermentation at 20°C and<br />the maturation on the fine yeast give this Gewürztraminer its special note.<br />Harvest and yield: When the grapes have reached the ideal physiological ripeness, they are selected at the end of September to mid-October and harvested by hand so that<br />only selected grapes are used for the further processing of this Gewürztraminer. With a vine density of 7,000 vines, a yield of 45 hectolitres of wine per hectare is obtained.<br />Recommended with: The Gewürztraminer AURATUS is suitable as an aperitif and goes very well with spicy dishes, liver pâtés, Asian cuisine, sophisticated fish dishes,<br />crabs and lobster.<br />Content: 0,75 l<br />

Complex Chardonnays from high altitudes are a rarity, but that is precisely where the appeal lies for us. Troy means 'path' in the language of our ancestors. The name<br />illustrates our long journey of research and experimentation with this noble grape variety.<br /><br />The winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused premature and rather uneven budding in the well-supplied soils. A<br />cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a lot of careful<br />manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative effects. A<br />significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the harvest. The<br />harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are characterised by<br />particular elegance. Vintage Collection Extra Brut 2018<br />Denomination: Franciacorta Millesimato.<br />Grape varieties: Chardonnay 65%, Pinot Nero 29%, Pinot Bianco 6%.<br />Original vineyards: 17 Chardonnay vines, with an average age of 28 years, located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and<br />Passirano. 7 Pinot Nero vines, with an average age of 29 years, located in the municipalities of Erbusco and Passirano. 2 Pinot Bianco vines, with an average age of 29<br />years, located in the municipality of Passirano.<br />Harvest: 2018. Very cold winter: February with snow and minimum temperatures as low as -7°C. With the onset of spring, the weather remained cold and damp and the<br />vines began budding about ten days later than usual. From mid-April, an abnormal rise in temperatures to 29°C favoured abundant flower fertilisation. With the arrival of May,<br />however, the rain returned. It was only from 15 July that the real summer was seen, which continued until 25 August with temperatures up to above average, with almost<br />torrid heat in August. The much-desired summer rain arrived in the third ten days of August and met the water requirements of the vines. The harvest that began on 13<br />August gave us a vintage characterised by a very generous nature, well managed by thinning, with beautiful, healthy and perfectly ripened grapes.<br />Average yield per hectare: 8,300 kilograms of grapes, equivalent to 3,570 litres of wine (wine yield: 43%).<br />Vinification: Franciacorta Vintage Collection wines are the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. The<br />grapes, freshly hand-picked into small crates, are graded and cooled. Each bunch of grapes is selected by expert eyes and hands, to then benefit from exclusive 'grape<br />spas'. A special system washes and whirlpools the bunches, using three soaking tubs and a drying tunnel. After crushing in the absence of oxygen, all the musts of the<br />base wines ferment in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the barrel elevage lasts only 5<br />months. A pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. After 7 months from the harvest, the cuvée is created.<br />The 2018 Vintage Collection Extra Brut is the result of a skilful blend of 26 base wines of Chardonnay, Pinot Blanc and Pinot Noir that give the finished product a particular<br />profile, rich and complex. The higher proportion of Pinot Noir gives it power and nobility, further reinforced by a long bottle ageing. The dégorgement takes place in the<br />absence of oxygen, using a unique system invented and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta<br />wines purer, more pleasant and longer-lived. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta wines<br />purer, more pleasant and longer-lived.
