Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit. PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The<br />strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Pomino Bianco Riserva DOC<br /><br />'On the road to Pomino I am thrilled every time I discover this unique corner of Tuscany: hills and cypresses suddenly give way to steep slopes, cooler temperatures in<br />summer and snow in winter, magnificent forests of firs and centuries-old sequoias surrounding the vineyards of Chardonnay, planted here since 1855. At an altitude of 700<br />metres, the Cru Benefizio, the first white wine in Italy fermented and aged in barriques, was born in 1973.'<br /><br />Climatic trend<br />The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the<br />beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the<br />beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild<br />temperatures and low humidity.<br /><br />Vinification and ripening<br />The Benefizio vineyard is located at an altitude of 700 m above sea level, with a southern exposure and predominantly sandy soil. The Chardonnay grapes were harvested in<br />boxes by hand with extreme care and attention. Once they arrived in the cellar, the pressing they underwent was extremely soft and gentle, allowing a good extraction of<br />clear must, which was further clarified after cold decantation. The musts thus obtained were placed in barriques, 50% new and 50% first-passage, where they underwent<br />alcoholic fermentation and only partially malolactic fermentation. Subsequently, the wine matured in wood, on the lees, with bâtonnage carried out as required. After further<br />bottle ageing, Benefizio Riserva reached its maximum taste-olfactory expression in terms of elegance and harmony.<br /><br />Tasting notes<br />Elegance, expressiveness and body. Benefizio 2021 presents a wonderful straw yellow colour with golden highlights. The bouquet is varied, presenting hints of white fruit<br />such as pear, exotic fruit notes such as mango, banana and pineapple and more citrus notes of candied citron. The citrus sensation is also picked up by hints of orange<br />blossom. On the palate it is savoury and mineral, with an elegant and harmonious finish; the aromatic intensity perceived on the palate is amplified by the alcohol content<br />and the aftertaste of dried fruit. Cabernet 'Istrice' 2020<br />South Tyrol DOC<br /><br />Cabernet 'Istrice' was Elena Walch's first red wine. At that time consisting of a predominant proportion of Cabernet Franc and only a little Cabernet Sauvignon, the wine<br />showed 'its spines', just like the little hedgehogs in the park of the family winery. Today, the percentage of 'Istrice' has exactly reversed with 90% Cabernet Sauvignon and<br />about 10% Cabernet Franc. Although it shows less of its spines, it has gained in elegance and finesse and continues to be one of the favourites at Walch.<br /><br />'The Cabernet 'Istrice' captivates with a strong intense ruby red and with stimulating fruity aromas in the nose, with red forest berries and heart cherries as well as seductive<br />spice with white pepper and chocolate. On the palate, the wine surprises with refreshing richness and structure, with elegant, precise tannins and fruity-spicy density, as<br />well as a long, juicy finish.'<br /><br />LESE 2020<br />Spring 2020, with its beautiful weather and warm temperatures, spring flowers in the garden and thick blanket of fresh snow on the mountains, led to the relatively early<br />development of the vines, which settled down again with the cooler temperatures in June. After a warm midsummer, the harvest started in the first days of September. The<br />autumn was characterised by warm days and cool nights, but also by some freak weather, whereby the careful cultivation of the vineyards in early summer was noticeable.<br />The 2020 vintage resulted in wines of great South Tyrolean typicity: The young white wines stand out with fresh liveliness and clear aromatic expression, the red wines show<br />very good structure and straight, fine fruit.<br /><br />VINIFICATION<br />Traditional maceration of about 10 days in steel tanks. Followed by malolactic fermentation in wooden barrels.
