PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The<br />strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for<br />chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br />

Pinot Nero 2022<br />South Tyrol DOC<br /><br />VINEYARDS: 100% Pinot Noir<br /><br />VINIFICATION: Traditional maceration for 10 days at controlled temperature in steel barrels. Subsequent malolactic fermentation and ageing in medium French oak barrels<br />(22hl) and partly in steel tanks.<br /><br />DEGUSTATION: The Pinot Noir Elena Walch presents itself with a clear, fresh ruby red. A fruity play of aromas with red berries, cherries and raspberries as well as spicy<br />notes with some white pepper characterise the nose. On the palate, the wine convinces with a juicy structure and inviting freshness, with soft, velvety tannins, discreet spice<br />in the background as well as a youthfully elegant finish.<br /><br />TERROIR: An interesting combination of vineyards in fresher sites between 400m a.s.l. up to 600m a.s.l.. Limestone and porphyry soils in south-eastern and south-western<br />exposure. Harvested and selected by hand with the utmost care.<br /><br />LESE 2022: An excellent vintage 2022 awaits you! Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar.<br />The 2022 wine year started with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The<br />drought did not lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy<br />grapes of very good quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the<br />summer, as well as a somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand. On the label the Latin phrase 'Sator Arepo Tenet Opera Rotas' means 'the farmer with the plough directs the work'. We chose it when we acquired the vineyard and<br />became its owners. It is a vineyard on the hill of Mango, a village in the Langa. We bought it in 1990. The letter G highlighted on the label underlines the transmission from<br />father to son of the knowledge of the vineyard: Giuseppe, Giacomo and Giuseppe again.<br /><br />Denomination: Moscato d'Asti DOCG.<br />Grapes and Vineyard: Produced with 100% Moscato d'Asti grapes from our own vineyard in Mango.<br />Winery: Maceration with the skins for a few hours in a horizontal press followed by pressing. White vinification with prise de mousse in temperature-controlled autoclaves for<br />20 days at about 4°. At the end of fermentation, stabilisation with refrigeration at - 4°, microfiltration and refinement in the bottle for a few weeks.<br />Tasting: Brilliant straw yellow colour, fine foam and rich perlage. Extraordinarily fresh and very varied bouquet, with fresh fruit, orange blossom, rose and musk among the<br />many notes. Sweet but very graceful taste, aromatic characteristic of grapes, delicious and with long persistence. Accompanies: fruit desserts, fruit, dry pastries, panettone,<br />hazelnut cake, special cheeses such as Castelmagno. Very pleasant as an aperitif and as a thirst-quenching drink at any time of day.<br />Serving recommendations: Serve at 6 - 8°.<br />

STEINRAFFLER<br />VIGNA LAGREIN<br /><br />A wanderer between worlds. On the one hand dense and concentrated and almost rustic in a pleasant way, it nevertheless reveals a certain elegance. The colour is deep<br />dark and garnet red with an almost black core. The bouquet reveals a mixture of earthy-mineral and spicy notes. The initially delicate fruit develops increasingly in the glass<br />and is reminiscent of dark, ripe plums. On the palate, the spice components continue, with the finish gaining in complexity due to the mineral notes that emerge once again.<br /><br />This grape variety, unique to South Tyrol, finds very good growing conditions in the vineyards of our Steinraffler winery. Here, in 1990, we planted the short-stemmed Lagrein,<br />a variety that had almost fallen into oblivion in South Tyrol, grafted it onto weak-growing rootstocks and grew it on wire frames. The rebirth of this old, autochthonous red wine<br />variety represents for us a happy combination of tradition and innovation.<br /><br />In South Tyrol, only the 'Vigna' classification guarantees the origin of a site wine.<br /><br />Grape variety: Lagrein<br />Soil: Loam and sandy soils<br />Vinification: After delivery, the destemmed grapes enter the fermentation tank. After a short maceration, the mash is fermented for about 10 days.<br />Maturation: It matures for 15 months in small oak barrels, another 7 months after the assemblage in large oak barrels and at least 12 months in the bottle.<br />Food recommendation: Red meats, game, mild cheeses.<br />

(Milena Vaira)<br />DESCRIPTION: Moscato is a beautifully aromatic variety that is deeply rooted in the winemaking heritage of Piemonte. We pick our grapes at full ripening, when the berries<br />start to be gold in color. Our dream is to bring all the perfumes, the freshness and the texture intact to the bottle.<br />VARIETY: 100% Moscato bianco.<br />VINEYARD AND TERROIR: Steep, old estate vineyards.<br />HARVEST AND WINEMAKING: Moscato harvest starts usually around the end of August. Picking decisions are individual to each site. Aldo always gives few more days of<br />ripening to this variety, which is a challenging decision in a crucial period yet rewarded by the beautiful fruits. Cold settling followed by a slow fermentation at low<br />temperature. Fermentation is stopped by drop of temperature, and the wine is kept refrigerated until bottling.<br />TASTING NOTES: Beautiful soft color with green reflections. Aromas of fruit with yellow flesh: apricot, peach, exotic fruits. Then elderflower, pear and a hint of sage.<br />Delicate and persistent bubbles, refreshing and cleansing the palate. The balance between sweetness and freshness continues in a long and creamy finish,<br />surprisingly savory.<br />

TYPOLOGY: RIOJA AOC red wine<br />PRODUCTION AREA: Rioja Alta and Rioja Alavesa.<br />GRAPE VARIETIES: Mainly Tempranillo, with small amounts of Garnacha and Graciano.<br />SOIL TYPE: Mainly clay-limestone soil.<br />VINIFICATION: The grapes are carefully destemmed before alcoholic fermentation in temperature-controlled stainless steel tanks. Prolonged maceration with the skins lasts<br />up to 2 days to extract colour, aroma and density in the mouth. Malolactic fermentation takes place in new barrels and stainless steel tanks, depending on the parcels and<br />their origin.<br />COLOUR: Deep and luminous red.<br />BOUQUET: A bouquet with beautiful notes of toasted wood and spices, combined with liquorice-based candied red fruits.<br />FLAVOUR: Full-bodied on the palate with a background of ripe fruit and elegant, soft tannins. A long silky aftertaste.<br />AGEING: Once the process is complete, the wines are aged in barrels and racked every 6 months. For 12 months they are aged in French (6%) and American (4%) oak<br />barrels. Maturation in bottles for at least one year before marketing.<br />

TYPE OF WINE: Red wine AOC Corbières<br />PRODUCTION AREA: The estate is nestled in the rugged hills just behind the Mediterranean coast of Narbonne, in the south of France.<br />GRAPE VARIETIES: Syrah 36%, Grenache noir 35%, Mourvèdre 12%, Carignan 9%, Alicante-henri-bouschet 8%.<br />VINIFICATION: made according to the traditional method. Alcoholic fermentation takes place in temperature-controlled stainless steel and concrete tanks. During<br />fermentation, the wine is regularly pumped to allow gentle extraction of the tannins. Once fermentation is complete, the wine is left untouched for a couple of days. The total<br />maceration time is 15-2 days.<br />COLOUR: ruby red<br />BOUQUET: Pure, sunny bouquet with notes of flint and graphite. These aromas are mixed with scents of thyme, black truffle, a little liquorice and eucalyptus.<br />FLAVOUR: The palate has the same mineral character, but on a slightly different register (mentholated verbena, sage, laurel). Secondary notes (from fermentation) of<br />blackcurrant and blueberry jam and a hint of fruit brandy, a sign of the beginning of a very harmonious evolution. The tannins are well integrated, giving the wine a perfectly<br />balanced structure.<br />
