Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Description:<br />Aroma of fully ripe wild berries and dark chocolate. Very dense and complex with fine tannins. Elegant Merlot with very good ageing potential.<br />Ageing potential: 6 - 8 years.<br />Recommended food: Goes well with hearty roasted or grilled meats with root vegetables and spicy dark sauces, as well as game dishes and cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Merlot. The grapes come from 20-year-old trellised vineyards with a planting density of approx. 5,000 vines/ha.<br />Sites: Sun-exposed slope. Extremely dry and heat-retaining quartz porphyry weathered soil that only allows low yields.<br />Vinification: Must fermentation at 28-30° C in stainless steel tanks. Gentle circulation of grape skins and juice is used to achieve optimal extraction of colour and extract<br />substances. Further ageing takes place entirely in small wooden barrels for about 12 months. After gentle filling and 12 months of bottle ageing, the wine is put on sale.<br />

The demanding Gewürztraminer prefers warm, airy sites with deep, loamy soils. These conditions are found in the Brenntal vineyard in the north-west of the village of<br />Kurtatsch.<br /><br />The Gewürztraminer gets its multifaceted aromas from the red clay soils: lychee, roses, mango, caramelised orange peel and lavender. On the palate, the wine presents a<br />creamy texture and elegant acidity that balances the muscular body. The wine reaches its complexity after a longer ageing period in the cellar and in the bottle, which is<br />why the wine is only sold as a Riserva 2 years after the harvest. I Frati<br />Lugana Doc<br /><br />The wine that has made the company's image known and continues to do so. It has a direct link with its variety, Turbiana, our indigenous vine. Conceived to be consumed<br />during the year, it expresses its best side many years after bottling. In its youth it is fresh, linear and endowed with great finesse and elegance with delicate notes of white<br />flowers and balsamic, hints of apricot and almond. Time allows it to evolve, expressing its mineral notes with greater determination. The wine acquires its own complexity<br />with hints of iodine, spices and candied fruit. In the mouth it is capable of enveloping the whole palate thanks to an important savoury essence accompanied by lively and<br />exuberant acidity. Marzemino, Sangiovese and 10% Cabernet make<br />it a wine that cannot go unnoticed. To this faithful little bird Elena Walch has thus dedicated her debut, an<br />elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino'<br />has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar. The 2022<br />vintage began with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The drought did not<br />lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy grapes of very good<br />quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the summer, as well as a<br />somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand. Overall, the wines are complex, with great structure and very<br />good fruit.<br /><br />VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months. The bouquet is reminiscent of<br />nettle, apples, green peppers and tropical fruits.<br />With a harmonious balance of acidity and minerality, notes of elderberry, banana and vanilla enrich the lively character of this wine.<br />Thanks to its excellent quality, this wine has been included in the Bernardi collection.
