Twelve hours of cold maceration, fermentation in steel tanks, five months of ageing on the fine lees in stainless steel.

Höfl unterm Stein in Söll near Tramin, is a south-eastern slope situated at 500 m above sea level. The strong, loamy limestone gravel soil produces very structured wines
with significant acidity.
