GRAPE VARIETIES: Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Lagrein SOIL TYPE: Alluvial soil of porphyry origin and moraine soil GROWING FORM: pergola and wire frame PLANT DENSITY: 6,000 - 10000 canes / ha CROPPING AGE OF THE VINE STOCKS: 18 years QUALITY IMPROVING MEASURES: Thinning of 60% of the grapes in July. Part of the Cabernet grapes is dried on the vine. HARVEST: Staggered from the beginning of October to mid-November. VINIFICATION: De-stemming and subsequent fermentation in stainless steel tanks at controlled fermentation temperature with a maceration period of about 10 days for Cabernet and 7 days for Lagrein. VINIFICATION: Biological acid reduction and ageing in new barriques of mainly French oak for 18 months. COLOUR: Dense garnet red Aroma: Ripe fruit, dried fruit, redcurrant, stewed fruit, vanilla. TASTE: Versatile aromatic, rich in extract, velvety tannin.
