HISTORY: Located in the Highland town of Alness, Dalmore Distillery boasts the oldest stills in the region, one of which has been in use since 1874! In fact, the distillery<br />still uses several stills for production, overseen by legendary master distiller Richard Paterson. For ageing, Dalmore uses a wide range of sherry casks: Oloroso, Amoroso,<br />Mathusalem, etc. from the Gonzales Byass vineyards in Andalusia. Once matured, the different varieties of barrels are assembled to create the various expressions within<br />the range. The deer that adorns each bottle of Dalmore is the coat of arms of the Mackenzie family, the historic owners of the distillery.<br /><br />PRODUCT: Initially left to mature in ex-bourbon American oak casks. The liquid is then divided into three different ex-oloroso sherry casks: Amoroso, Apostoles and<br />Matusalem. Each of these casks gives the whisky its individual and unique characteristics. The three liquids are then reassembled and left to rest.<br /><br />PROFILE: On the nose bitter orange marmalade, cinnamon and nutmeg. Ardbeg Corryvreckan<br /><br />Ardbeg Corryvreckan takes its name from the famous whirlpool that lies to the north of Islay, where only the bravest souls dare to venture. Swirling aromas and torrents of<br />deep, peaty, peppery taste lurk beneath the surface of this beautifully balanced dram. Like the whirlpool itself, Corryvreckan is not for the faint-hearted! Awarded The World's<br />Best Single Malt in 2010 by the World Whiskies Awards.<br /><br />Non chill-filtered at 57.1% ABV<br /><br />Color: Rich Amber<br />Aroma: Heady, intense and powerful. Swirl the glass and dip your nose into the torrents of tarry ropes, creosote and linseed oil rising from deep within the vortex. A collision<br />of waxy dark chocolate, warm blackcurrants and muscovado sugar pulls you under its spell with a burst of plump cherries and earthy pine needles leaping from its depths.<br />From salty seasoning comes a briny character with tangy crisp seaweed and smoky bacon swirling on the surface with hints of sweet vanilla, spicy cloves and blueberries.<br />Surrender to its dangerous depths with the heady force of menthol, treacle and chilli sauce.<br /><br />Taste: Plunge into the whirlpool and torrents of taste well up on the palate; deep, peppery and chewy, bombarding the tongue. The first plunge brings forth chewy peppered<br />steak soaked in pepper sauce with the tang of crispy seaweed. As you descend deeper, encounter a mouthful of black tarry espresso coffee that coats the palate with rich<br />melted dark fruits (blackcurrants, blueberries and cherries) and bitter almonds. Ardbeg Blaaack Limited Edition<br /><br />Ardbeg Blaaack is the feisty Limited Edition bottled in celebration of the 20th Anniversary of the Ardbeg Committee, founded in the year 2000.<br /><br />To mark such a momentous occasion, the Distillery vowed that the casks used to honour their global flock would be right on the nose. For the first time in Ardbeg's history,<br />we rounded up Pinot Noir casks from the country that lies the furthest distance from Islay - New Zealand, that other remote island nation where sheep have been known to<br />outnumber the locals by 7:1.<br /><br />Ardbeg Blaaack knits together velvety summer fruit pudding and bitter cherry, with a deeper edge of soot and Ardbeg's hallmark smoke.<br /><br />Perfect for toasting our legendary Committee.<br /><br />ABV 46%<br /><br />Colour: Deep cherry blossom<br />Nose: On the nose baked fruit pudding knits together seamlessly with cedar wood and aromatic cigar box. Oak tannins and rich truffles then break away to reveal subtle<br />notes of smoky jam tart. With a splash of water, intense aromas of bitter cherry and a curiously zesty note emerges. Naturally, this dram then travels in a different direction<br />with lovely fragrant violet notes.<br />Taste: A velvety and surprisingly furry mouthfeel drives your palate into a complex symphony of contrasting flavours. Aniseed, soot and summer fruits - such as cherries,<br />strawberries, apricots and pears - give way to crumbly pastry, dark chocolate, coffee and almonds.<br />Finish: A long, lingering sooty finish.<br />

<br /><br />Ardbeg An Oa<br /><br />A welcome new addition to the Ultimate range. Ardbeg An Oa is singularly rounded, due in no small part to time spent in our newly established bespoke oak Gathering Vat<br />where whiskies from several cask types - including; sweet Pedro Ximenez; spicy virgin charred oak; and intense ex-bourbon casks, amongst others - familiarise themselves<br />with each other. The result is a dram with smoky power, mellowed by a delectable, smooth sweetness. Hallmark Ardbeg peat, dark chocolate and aniseed are wrapped in<br />smooth, silky butterscotch, black pepper and clove, before rising to an intense crescendo of flavour.<br /><br />Non chill-filtered with a strength of 46.6% ABV.<br /><br /><br />Color: Light Gold<br />Aroma: Rounded and smoky - like burning Applewood - with creamy toffee, aniseed, treacle and dates. A curious suggestion of juicy fruits, such as peach and banana. With<br />a drop of water, reminders of Ardbeg's classic fragrance - lime, pine resin, fennel, saddle soap and tar. A gentle waxiness, like fragrant candle wax, and hints of smoked<br />herbs. An Oa gives a final subtle reminder of the sea with briny notes and seaweed but always accompanied with creaminess.<br /><br />Taste: A smooth, creamy texture leads into a huge syrupy sweetness, flavours of milk chocolate, treacle toffee, aniseed, orange and smoky tea leaves. Gentle, sweet<br />spices (nutmeg &amp; cinnamon), some cigar smoke, and a very unusual flavour of grilled artichokes. Wood is always present in the spirit, gently nutty and reminiscent of a<br />carpenter's workshop. A long, sweet finish, with floral overtones, mint toffee and some gentle malty biscuit notes.<br /><br />Finish: Lingering, seductive, gentle yet intense, with flavours of aniseed, hickory and distant subtle smoke.<br />
