Our goulash has never been in such demand as it is today. Today, when time is so short, people like to reach for ready-to-eat products, especially if their quality underpins<br />the decision they have made.<br /><br />We are probably the only manufacturers who produce completely without preservatives or colourings. We achieve the shelf life by sterilisation with pressure and counter-<br />pressure. We have been using this method of preservation since the beginning of the last century. Of course, this requires a rigorous quality of the raw material, i.e. the<br />venison, as well as the various other ingredients.<br /><br />Even the empty can is state of the art, such as the enamelled inner coating, the practical tear-off lid, etc.<br /><br />The target group of our consumers has expanded to include almost all age groups these days. Our cans are especially interesting for students, singles, seniors and also<br />housewives with family - according to the latest trend also for parties and celebrations. The product is very easy to handle and ready to serve after a short heating.<br /><br />Ingredients: Venison (farmed) 55 %, meat stock (water, beef, double concentrated tomato paste, roasted onion, potato starch, WHEAT FLOUR, soya and sunflower oil, salt,<br />spices, natural flavours). Maggiarino Vino Nobile di Montepulciano DOCG 2015<br /><br />Climate: the mild winter season, characterised by frequent rainfall, preceded a spring with above average temperatures, favouring an early bud break of about 10 days. The<br />summer, which tended to be hot and dry without any heat peaks, guaranteed the slow and regular growth of the vines and an optimal start to the ripening of the grapes. The<br />Sangiovese grapes for Maggiarino were harvested by hand around the middle of October.<br /><br />Vinification: The best Sangiovese grapes, from a selection of vineyards on the Maggiarino estate, one of the most suitable areas for La Braccesca, underwent a vinification<br />process aimed at preserving the aromas and enhancing the structure. After about 20 days of maceration in stainless steel vats, the wine was transferred to tonneaux, where<br />malolactic fermentation took place and its ageing process began, lasting about 12 months. Following bottling in spring 2017, the wine rested in the bottle for about two years<br />before release.<br /><br />Historical data: La Braccesca extends over 508 hectares where the ancient farm of the Bracci counts once stood, hence the name of the estate and its coat of arms: an arm<br />covered in armour holding a sword. The total surface area of the vineyards is 340 hectares divided into two parts: the first, 366 hectares of which 237 are planted with vines,<br />is located on the border between the municipalities of Montepulciano and Cortona. The other body, 142 hectares, 103 of which are planted to vines, extends as far as<br />Montepulciano between three of the most renowned areas for the production of great red wines: Cervognano, Santa Pia and Gracciano.<br />Maggiarino comes from the vineyards of the farm of the same name, one of the most vocated areas of La Braccesca. A well-balanced wine capable of exalting the fragrant<br />varietal character through the silky tannins typical of the Nobile di Montepulciano territory, a historic Tuscan denomination.<br /><br />Tasting notes: Maggiarino has an intense ruby red colour. On the nose notes of violet, red fruit and vanilla compose a complex aromatic profile. On the palate it is soft,<br />balanced, silky and sustained by the excellent freshness typical of Sangiovese. Persistent and mineral on the finish.<br />

The palate is explosive thanks to its elegant sweetness and a surprising<br />finish of citrus fruits and chestnut honey.<br />PAIRING: It is a meditation wine, a glass alone can already give great emotions. Frequent rainfall was accompanied by mild temperatures and no temperature extremes.<br />Thanks to the very favourable climatic conditions in September and October, the noble rot gradually covered the grapes, with no risk to their health, concentrating the sugars<br />and increasing the aromatic complexity. Harvesting began towards the end of October with the Traminer, followed by the Riesling, Sauvignon and Sémillon, and concluded<br />towards the end of November with the Grechetto.<br />

Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

Le Petit - true greatness.<br /><br />Green reflections in a bright, luminous yellow - there is also a flash of foreboding: 'This is something special!' Sweetness of selected elegance and unexpected freshness<br />fulfil the promise.<br /><br />Grape variety: Petit Manseng.<br />Colour: sparkling golden straw yellow.<br />Aroma and taste: fruity aromas of mango, lychee, dried apricots; complex depth due to fine honey and botrytis notes, balanced play between sweetness and acidity on the<br />palate.<br />Site and soil: Mazzon in Kaltern at 400 m above sea level, a high plateau sloping towards the south, sunny and airy, ideal for the late harvest. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Maturation: The slow pressing of the sultana berries took eight hours, fermentation took place in wooden barrels, spontaneously with the grape's own yeasts. The must<br />fermented slowly for several months; at 11% alcohol, the fermentation stopped all by itself. An optimal balance between alcohol, acidity and sugar are the natural result.<br />Serving temperature: 8-10 °C.<br />Pairing: Delicate desserts and very good with final cheese.<br />

This continuation of favourable weather conditions is unprecedented, and<br />the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />
