South Tyrol DOC<br />Sauvignon<br /><br />Since the 1980s, this grape variety with its distinctive and powerful aroma has enjoyed great popularity in the Überetsch region. The stony limestone gravel soils and the cool fall winds produce a lively and expressive Sauvignon. Freshness and delicate minerality paired with melting and elegance make the Sauvignon Fallwind a stylish white wine.<br /><br />Eye: Brilliantly bright with a light green sheen.<br />Nose: aromas of pineapple, elderberry, gooseberry and honey.<br />Taste: mineral, refreshing and balanced<br />Varietal description: Sauvignon<br />Site: Vineyards in Eppan/Berg and near St. Michael (480-550m)<br />Exposure: south-east<br />Soils: Calcareous gravel soils<br />Method of cultivation: Guyot<br />Vine age: 10 to 25 years<br />Harvest: End of September; harvest and grape selection by hand.<br />Vinification: Fermentation and ageing on the lees in steel tanks until the end of February.<br />Yield: 60 hl/ha<br />Drinking temperature: 8-10°.<br />Ageing/potential: 4 to 5 years<br />Recommended consumption: South Tyrol's asparagus wine also goes wonderfully with light Asian dishes such as sushi or Thai chicken skewers with peanut sauce (saté) but also Alpine delicacies such as quail breast with chanterelle tartare.<br /><br />

Named for the Renaissance castle built there by Habsburgs<br />in 1620 and rising up from Lake Caldaro in alternating<br />moderate and steep slopes, the Vigna Castel Ringberg is a<br />crown jewel of the region and a monopole for Elena Walch,<br />from where many of her award-winning, mineral-driven<br />wines emanate. The term Vigna is an additional denomi-<br />nation of origin, recognizing a precisely demarcated and<br />cartographically recorded single vineyard. In addition to<br />variable altitudes from 330 to 400 meters above sea level,<br />Vigna Castel Ringberg also boasts a multiplicity of soils.<br />The higher perches, climbing into the Mendel ridge of the Dolomites, are of 30,000 year old glacial Adige<br />River gravel, while calcareous soils with morainic substrata join loose limestone in gentler lower zones. The<br />moderating influence of the lake and the strong afternoon drying southerly wind known as Ora also<br />contribute to the balanced, elegant character of the wines, from a host of native and international varieties.<br />A clear straw yellow characterizes the Pinot Grigio Vigna Castel Ringberg. A complex variety of fruits,<br />especially ripe pears and lime blossom, as well as spicy sage notes inform the bouquet. Structure and elegance,<br />power and harmony dominate the palate, combined with creamy fullness and density. A single vineyard Pinot<br />Grigio with a lot of character!<br />VINIFICATION<br />Gentle pressing, followed by static clarification. A part ferments in stainless steel tanks<br />under controlled temperature (20°C). 20% of the must ferments in French oak barrels<br />and barriques (Allier) followed by partial malolactic fermentation. <br />VINIFICATION<br />Very carefully selected, fully ripe grapes get selected, picked in two harvests. Before pressing, the crushed berries are cold macerated for 6 hours, after which the juice is clarified by refrigeration and natural sedimentation. Fermentation is activated using selected yeasts and the temperature is controlled at 18°C. The young wine remains on its lees for several months.<br /><br />Variety: 100% Gewürztraminer<br /><br />

<br />VINIFICATION<br />Traditional must fermentation for approximately 10 days in stainless steel tanks, followed by malolactic fermentation in large oak vats. Ripassa Valpolicella Ripasso DOC Superiore<br /><br /><br />Immediately after the fermentation of the Amarone raisins, the best selection of Valpolicella 'ripassa' on the Amarone marc, starting the second short fermentation; in this way the alcohol content increases and a product richer in colour, extracts and aromas is obtained.<br /><br />After ageing in French oak tonneaux for 18/20 months, it is then left to rest in the bottle for 6 months.<br /><br />The result of this process is a refined and concentrated wine, extremely soft and velvety, with intense aromas of small red fruits.<br /><br />Ripassa offers fruity scents and fine tannins on the palate, with an aura of chocolate and spices. It represents one of the most significant wines in Zenato's oenological evolution.<br /><br />Grape varieties: 85% Corvina Veronese, 10% Rondinella, 5% Corvinone.<br />Geographical location and characteristics of the vineyard: hilly area of Valpolicella, south-eastern and south-western exposure.<br />Average altitude of the land: 250-300 metres above sea level.<br />Soil type: predominantly cretaceous, calcareous<br />Training system and planting density: guyot, with about 5,000 vines per hectare.<br />Average age of vines: 10/15 years old<br />Number of buds: 8/10 per plant<br />Yield per hectare: 100 quintals<br />Harvest time and method: first and second ten days of October. Manual harvesting.<br />Vinification: The grapes are destemmed and macerated in stainless steel fermenters for 10-12 days. After alcoholic fermentation, the new wine is separated from the skins by means of a soft press and stored in steel tanks until January, when the dried grapes are pressed to produce Amarone. At this point, the Valpolicella is 'repassed' on the Amarone marc with a 7-8 day period at a temperature of 25-28°C. This is followed by 18 months of refinement in tonneaux and a few months of bottle ageing in temperature-controlled environments.<br />Colour: deep ruby red.<br />Bouquet: intense, fine and persistent, with hints of black cherry and plum.<br />Taste: harmonious and velvety, with good structure.<br />Serving temperature: 18°C<br />Food pairings: an excellent companion to game dishes, grilled meats and roasts, cured meats and mature cheeses.<br /><br />

Assemblage three months before bottling.<br /><br /><br />Character<br /><br />Colour: rich, impenetrable ruby red with violet reflections<br />Nose: This Lagrein selection can be described as multi-faceted and extremely intense on the nose, with hints of liquorice, coffee beans, vanilla bean, cloves and black tea, making it both spicy and juicily fruity, with aromas reminiscent of sour cherry and blueberries.<br />Taste: Harmonious on the palate with very compact and concentrated, multi-layered flavours characterised not only by a juicy fruit but also a peppery spiciness as well as a slightly sweet bitter chocolate note rounded off by finely polished tannins.<br /><br /><br /><br />
