Chardonnay LAFÓA<br />Alto Adige Chardonnay DOC<br /><br />The grapes for this Chardonnay grow on old vines with very small yield. The vineyards are situated at an altitude of 400 to 550 m a.s.l. on dry morainic soils. A sinewy but elegant Chardonnay with great potential for aging. Tasting notes: Of a pale intense straw yellow colour tinged with green nuances; a full but well- integrated wine, imbued with honeydew melon, creamy fruit salad and nutty aromas; ample acidity with a delicate underlay of oak on the palate and a long, luscious finish.<br /><br />Cellaring potential: 6-10 years.<br />Food Combination: This full-bodied wine is perfect on its own, but an incredible complement to rich fish dishes such as poached skate with mint cream sauce, Dover sole, Cicatelli pasta with fresh crab, stirfried scallops with ginger and the perfect partner to chicken and veal.<br /><br />Serve lightly chilled: 12-14° C.<br />Grape Variety: Chardonnay; old espalier-trained vines. Location: Selected vineyards at an altitude of approx. 400-550 m a.s.l. A very dry site, medium-structure morainic soils with a sand and gravel composition; the microclimate is cool, with striking contrasts between day and night time temperatures.<br /><br />Yielding: 49 hl/ha<br />Winemaking: Grapes are pressed without being destemmed; fermentation takes place in a combination of new and used oak barriques, where partially malolactic fermentation also takes place. The wine refines on its fine lees for 10 months, and regular battonage is carried out. Further 6 months of bottle-aging before release.<br /><br /><br />

TYPOLOGY: Chablis AOP white wine<br />PRODUCTION AREA: Chablis<br />GRAPE VARIETIES: 100% Chardonnay.<br />VINIFICATION: The whole bunches are harvested in a pneumatic press; 12 hours of sedimentation at 12-15 ºC in wide tanks specially designed to speed up the process<br />and produce very clear juice. 2 weeks fermentation at 16 ºC in stainless steel tanks.<br />COLOUR: pale gold.<br />BOUQUET: Young, pungent nose with mineral overtones.<br />PAIRINGS: Perfect as an aperitif or with shrimp and watercress salad, Japanese food or oysters. Serving temperature: 10-12 °C<br />FLAVOUR: fresh and harmonious palate with flavours of white fruits and spring flowers.<br />AGEING: aged for 6 months on fine lees in stainless steel tanks.<br />

<br />South Tyrol DOC<br />Pinot Noir Riserva<br />Sanct Valentin<br /><br />Pinot Noir has been cultivated in South Tyrol since 1850 and is also known in many places as Pinot Noir. It is the winery's most important red wine. This grape variety is a<br />very special challenge for the winemaker, as it is very demanding in terms of soil and climate, and must also be processed with special care in the cellar. For the Pinot Noir<br />Sanct Valentin, which has been part of the prestige line since 1995, only grapes from the best vineyards and oldest vines are used. CLOUDY BAY<br />SAUVIGNON<br />Pure, fresh and vibrant<br /><br />With its extraordinary aromas, Cloudy Bay Sauvignon Blanc was an instant success when it appeared on the market in 1985. This wine put New Zealand on the global wine<br />map and made Sauvignon Blanc famous as a single varietal wine. More than 80 expressions of 98 parcels are used in its creation, with yields kept low to produce a wine<br />with a concentrated aroma. The winemaking process aims to preserve and enhance the fresh, fruity notes, using selected yeasts and stainless steel vats, along with a small<br />percentage of barrel fermentation to give structure but without hinting of oak.<br />TASTING NOTES<br />Intense and vibrant, with aromas of ripe passion fruit, white peach and a hint of lime. The palate is deliciously concentrated and tropical, with saline notes providing<br />structure, while the passion fruit and vibrant citrus acidity bring balance.<br />
