<br />Talò Malvasia Nera Salento I.G.P.<br />750 ml<br /><br />In San Marzano, the vine-growers take care of their small vineyard as one would a garden.<br />Their stories are many, as are the names of their families.<br />We have chosen one, Talò, to thank them ideally: family for family, story for story.<br /><br />Grape variety: Malvasia Nera di Brindisi.<br />Area: San Marzano, Salento, Puglia. About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow and with a good presence of skeleton.<br />Cultivation: Espallier (4,500 vines per hectare).<br />Harvest: Second half of September.<br />Vinification: Thermo-controlled maceration for about 10 days followed by alcoholic fermentation with selected yeasts.<br />Ageing: In French oak barriques for 6 months.<br />Organoleptic characteristics: Intense ruby red colour; complex bouquet reminiscent of ripe red fruits and spices; very full-bodied wine, pleasantly soft and long lasting.<br />Food pairing: Red meats, roasts with elaborate sauces and moderately mature cheeses.<br />Serve at: 16-18 °C.<br />

The Wine<br /><br />For over five years, Cabreo has expressed the perfect harmony between tradition, innovation and suitability for the territory in which it is born: Greve in Chianti. This wine<br />is the result of a careful blend of Merlot, Cabernet Sauvignon and Sangiovese, which respectively give softness, strength and elegance, and of a long aging in small French<br />oak barrels.<br />Vintage: The 2020 vintage is purple red, crystalline and bright, on the nose it presents a synergistic sensorial profile between the descriptors of wood and those of<br />cabernet. Partially tamed by the softness of the merlot. In the mouth it expresses the young maturity of a great red, alternating pleasant tannic sensations with sweet vinous<br />sensations. Nose and mouth constantly evolving in the glass. Descriptors: cherry, coconut, chocolate, vanilla and final tobacco and infusions.<br />Pairing: it goes perfectly with all meat dishes, great cheeses, or just enjoyed with friends.<br />First vintage: 1982<br />Shelf life: up to 20-30 years<br />Curiosity: The word Cabreo, as per authentic Tuscan tradition, indicates maps of the estates owned by the great Florentine families<br /><br /><br />The Field<br /><br />Production Area: wine made from grapes grown on vineyards of Tenute del Cabreo located in the<br />hills of Greve in Chianti<br />Altitude: about 300 MSL<br /><br /><br />The Grapes<br /><br />Grape varieties: Cabernet Sauvignon, Merlot and Sangiovese<br />Planting pattern: 3,000 - 5,000 plants per hectare<br />Production per hectare: on average 7 tons of grapes<br />Grape yield: about 65%<br /><br />In the winery<br /><br />Vinification: in stainless steel vats at a controlled temperature of 28 ° C. Epokale was the first Italian white wine to be awarded 100 points by Robert Parker's Wine Advocate. This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place. It took 35 notarial acts and 7 years to bring together the many plots of land in Montebruna, a property of great oenological value. When we succeeded, for joy we gave it<br />voices and verses, involving artists, poets and musicians who sang about this Barbera and its land, 'a land that speaks'.<br /><br />Denomination: Barbera d'Asti DOCG.<br />Grape and Vineyard: Montebruna is a Barbera d'Asti DOCG made from 100% Barbera grapes grown in our own vineyard in Rocchetta Tanaro.<br />Winery: The fermentation takes place for a fortnight in steel tanks at controlled temperature; then for one year the wine matures in large oak barrels.<br />Tasting: Ruby red violet colour. It impresses with very clear scents of ripe cherries and small red fruits. The taste in the mouth is deep, full, harmonious, with a long finish<br />that maintains the persistence of the flavour and finishes with almonds. Excellent, well-balanced, fragrant and very drinkable. It accompanies pasta-based first courses, main<br />courses of white or red meat, cheeses and sausages.<br />Serving temperature: Serve at 15-17°.<br />
