Our grapes, so rich in fixed acidity, made us think of production by the classic method in line with those of the best<br />Italian companies in the production of sparkling wine. A fine continuous perlage, it appears to us in the glass as a bright yellow colour with green highlights. Fragrant to the<br />nose, with hints of citrus, flowers and traces of peach. The silky and creamy carbonate makes room for the acidity to stimulate salivation. Perfect as an aperitif but also<br />able to display all the versatility of the classic method when accompanying meals. Excellent with freshwater fish, during the entire meal, with poultry, cold white meats and<br />summer salads. Combines successfully with a quality Parmesan cheese. MECZAN PINOT NOIR<br /><br />The Meczan is a very varietal Pinot Noir, which is characterised above all by its softness, its distinctive fragrance and its clear fruity character.<br />It has a vivid ruby red colour with slight garnet reflections. Fresh, animating bouquet with seductive notes of wild berries and cherries.<br />On the palate, the Meczan presents itself very harmonious and distinctly juicy with intense fruit notes.<br /><br />Pinot Noir was first successfully cultivated in Trentino-South Tyrol at the beginning of the 19th century.<br />It soon became apparent that the gentle hills and the special microclimate of the high plateau in Mazon offered the ideal conditions for producing Pinot Noir of international<br />calibre.<br />Meczan<br />Hofstätter Classification<br /><br />Grape variety<br /><br />Pinot Noir<br />Soil<br /><br />Conglomerate of clay, limestone and porphyry soils.<br />Vinification<br /><br />75% of the grapes are destemmed, 25% enter the fermentation tank intact. Exilissi Sell 2007<br /><br />Vintage: After an exceptionally mild winter, the vines sprouted earlier than ever before. April and May were also warmer than average, so that by mid-May the flowering was<br />already over in all locations. This 3-week advance in vegetation lasted until harvest. The cool August and a golden September proved it once again: The last weeks before<br />the harvest are decisive for the quality.<br />Whites and reds were able to ripen perfectly and were harvested at the optimal time. That is why the harvest took longer than ever before. The first grapes entered the<br />cellar on 21 August, the last on 24 October. All in all, it should be a very good vintage. The red wines promise to be the best of the last ten years.<br /><br />Vinification: gentle pressing of the delicate grapes. Fermentation of the unclarified must in 500 l tonnequx, further 15 months of maturation in the same barrel. Bottled in<br />March 2009<br /><br />Harvest conditions: a sunny and warm late autumn allowed the grapes to hang until mid-November, thus enabling the harvest of a very ripe grape.<br /><br />Site/soil: Höfl unterm Stein in Söll near Tramin, situated on a south-eastern slope at 480 to 550 metres above sea level. On gravelly, loamy calcareous gravel soil, there are<br />both 30-year-old pergola plants and wire frames that are over 10 years old, which produce something unique with an extremely low yield of 25hl/ha.<br /><br />Oenologist's notes: an enormously concentrated late harvest with intense aromas of sultanas, apricots and spices. Very smooth and long on the palate. TYPE: AOC Sauternes Premier Cru<br />PRODUCTION AREA: The vineyards of the Sauternes appellation are located on the left bank of the Garonne, about 50 km south of Bordeaux.<br />GRAPE VARIETIES: 83% Sémillon, 17% Sauvignon<br />SOIL TYPE: Clay-sandy soil.<br />VINIFICATION: All batches are pressed individually using a low-capacity pneumatic press. After several hours of cold settling, the must is fermented in new oak barrels<br />produced by Tonnellerie des Domaines in Pauillac. Alcoholic fermentation is interrupted as soon as the desired balance between alcohol and sugar is achieved. After<br />fermentation, the wine is aged in barrels for 24 months.<br />COLOUR: Delicately golden with green highlights.<br />NOSE: The nose is intense and richly aromatic. Initial notes of citrus zest are followed by hints of lemon cake, then toasted notes reminiscent of freshly baked brioche.<br />FLAVOUR: On the palate, there are aromas of mandarin peel and candied orange, enriched by a touch of star anise that emphasises the aromatic freshness of this wine.<br />The rich and dense mouthfeel has good length with a nice bitter finish.<br />
