Already on April 10, on the sunny sites<br />around the monastery, we saw the first shoots. Thanks to mild spring weather, there were<br />no problems with frost. During the summer the conditions were good as well, with normal<br />temperatures and average rainfall. There were no extreme weather event and so harvest<br />started about 10 days early on September 14th. Unfortunately, the autumn was a little bit<br />rainy and therefore the diurnal temperature shift was less extreme than usual. In order to<br />get healthy grapes, the harvest dates were brought forward and so harvest was already<br />completed by mid-October.<br />The wines of the 2020 vintage are delicate, fresh and fruity with moderate alcohol and an<br />appealing acidity. Similar to the 2019 vintage.<br />

Grape variety: Petit Verdot ,Syrah, Lagrein, Merlot,Cabernet Sauvignon - in equal proportions.<br />Vinification: The different grape varieties are harvested at the same time and processed together. Only the Cabernet Sauvignon, which matures later, is fermented<br />separately. The maceration in steel tanks lasts about 10 days, followed by the acid reduction in wooden barrels. VINTAGE 2021<br />We are excited about a qualitatively excellent vintage, especially for our white wines! A dry and cool spring led to a late flowering of the vines and was followed by a warm<br />and dry June. After an irregular midsummer, a surprising change in the weather followed in mid- ugust, which brought dream weather until the end of September and the very<br />best conditions for achieving an optimal maturity of the grapes. The harvest began in mid- September, about 10 days later than last year. With blue skies and lots of<br />sunshine, midsummer daytime temperatures and autumnally cool nights, the grapes were able to achieve ideal sugar levels while maintaining very good acidity. Accordingly,<br />the 2021 wines show great quality!<br /><br />VINIFICATION<br />Must fermentation for approximately 10 days, followed by malolactic fermentation in stainless steel tanks. Maturation for 20 months in French oak barriques. The wine is<br />then being bottle aged for several months before being released. Since 2015, a state-of-the-art fermentation cellar has allowed the grapes to be processed with the utmost<br />care, with whole-grape processing using via gravity fed technology. A highly sensitive destemmer and the gentle transport of the grapes by means of a specialized container,<br />cuvon, which runs on rails, prove to be very gentle on the grapes and preserve their high quality. VINTAGE 2022<br />An excellent vintage 2022 is awaiting you! As a result of the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar. The<br />2022 wine year began with a warm spring, which led to an early start of flowering. The succeeding summer was consistently dry and warm-to-hot by the midsummer. The<br />drought did not cause any problems, not at least thanks to our irrigation systems and smart technology. The warm summer months have resulted in extraordinarily healthy<br />grapes of very good quality and maturity. The acidity values were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work during<br />the summer months, and a slightly earlier harvest. The first grapes were harvested at the end of August - as always entirely by hand. Overall, the wines show complexity,<br />great structure and very good fruit.<br /><br />VINIFICATION<br />Traditional must fermentation for approximately 10 days in stainless steel tanks, followed by malolactic fermentation in large oak vats. The final wine matures for 12 months<br />in French oak barriques and is being bottle-aged for several months before being released.<br /><br />Alcohol: 14,50 % Vol<br />
